Question: Homemade french fries - how do u make urs!?
i have some red potatoes!.!.i plan to fry up- but mine turn out hard instead of crisp sometimes- why is that!? and is there any way to season them up - like with vinegar or something!?

The double fry technique is the key!. also, a cold water soak beforehand!.

Soak the cut up fries in cold water for about 30 minutes!. Remove from water and dry well!. Fry at 375 for about 8 minutes!. Remove from oil and drain!. Place back in the oil for another 3 minutes or so!.!.!.until the fries float and are golden brown!.

I like to season them with malt vinegar and lots of salt!. also, Old Bay once in a while!. Delicious!Www@FoodAQ@Com

I slice the potatoes about 1/2 inch thick!. Toss them in vegetable oil, salt, pepper, garlic powder, sometimes chili powder!.
Bake them at 400 for 15 minutes, flip them, and bake another 10-15 minutes, I usually taste one every 10 minutes, until they are done to my likeness!. After they are done, add some white or malt vinegar, more salt and pepper and serve with ketchup!. YUMWww@FoodAQ@Com

Usually if they are hard still, they have not cooked long enough or cut too big!. You can season them with just about anything, it depends on what you like!. You can use anything from rosemary, salt, pepper, pretty much any spice!. You could also use cheese and bacon if you like, just for something new once in a while!. Red potatoes do not make good fries!. Try baking potatoes!.

"alimcbeil" is close where the soaking and double fry is concerned!.

I suggest you check out Belgian fries!. They are the original and best in the world!. Forget about vinegar and ketchup!. Mayonaise is the word!.

Make sure you have enough oil, its best too cook them in a deep fryer, but possible in a pan!. When you cut them, cut them thick!. If you think its too thick, cut it a little thicker!. Dont leave in too long!.Www@FoodAQ@Com

I prefer Flan!.
Flan is a traditional Mexican dessert and there are many versions!. This one is prized for it's simplicity!. If you've never made flan before, now is the time to try it!.
Prep Time: 20 minutes
Cook Time: 1 hour
Ingredients:
1 cup and 1/2 cup sugar
6 large eggs
1 14oz can sweetened condensed milk
2 13 oz cans evaporated milk
1 teaspoon vanilla
Preparation:
Preheat oven to 325 degrees!. You will need 6 ramekins or other specialty flan cook ware and a large baking pan to put them in!.
Pour 1 cup sugar in warm pan over medium heat!. Constantly stir sugar until is browns and becomes caramel!. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides!. Reheat caramel if it starts to harden!.

In a mixer or with a whisk, blend the eggs together!. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla!. Blend smooth after each ingredient is added!.

Pour custard into caramel lined ramekins!. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water!. Bake for 45 minutes in the water bath and check with a knife just to the side of the center!. If knife comes out clean, it's ready!.

Remove and let cool!. Let each ramekin cool in refrigerator for 1 hour!. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard!.Www@FoodAQ@Com
