Question: I have a recipe thats odd, what holds it all together!?
ok here is the original from an ancient (Old) scottish cook book!.
" HONEY CAKES!.
One pound and a half of dried and sifted flour, three quarters of a pound of honey, half a pound of finely-pounded loaf sugar, a quarter of a pound of citron, and half an ounce of orange-peel cut small, of pounded ginger and cinnamon, three quarters of an ounces!. Melt the sugar with the honey, and mix in the other ingredients; roll out the paste, and cut it into small cakes of any form!. "

And here is my converted one:HONEY CAKES!.
6 cups flour
1 1/2 – 2 cups of honey
1 1/8 cups sugar
2/3 cup citron
2 TBS orange-peel cut small
1 ? TBS ground ginger and cinnamon!.
Melt the sugar with the honey, and mix in the other ingredients; roll out the paste, and cut it into small cakes of any form!.
There is no baking!? I tink there must be so I decided on 325 degrees for 10-15!.
But there are no eggs or anything Do you think they will come out like little hard flat bricks!?Www@FoodAQ@Com

It's the melting that makes it sticky, put the sugar and honey together and it will hold together as if you added eggs!. This is a great recipe Enjoy! Watch that you don't burn the sugar or you'll have a real mess!.Www@FoodAQ@Com

Very similar to the recipe at the link!. Bakes for 20 minutes at 350F!.Www@FoodAQ@Com

The best way to find out is experiment, try it without eggs, then with!. Try baking them for different amount of time!. I'd do this in small batches so you dont waste too much!.Www@FoodAQ@Com

Well the honey is what hold this recipe together and I would think as long as it does not cook to long it should not get really hard!. I would think warm and chewy!.Www@FoodAQ@Com

well first of all if u stuck with the regular recepie it would probably be better but yes they will but don't cook them if it doesnt tell u to the honey and sugar combination will hold it togeatherWww@FoodAQ@Com
