Chocolate-Chocolate Chunk Muffins

INGREDIENTS:

* 6 tablespoons unsalted butter
* 4 ounces bittersweet chocolate, coarsley chopped
* 2 cups flour
* 2/3 cup sugar
* 1/3 cup unsweetened cocoa powder, sifted
* 1 tablespoon baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspon salt
* 1-1/4 cups buttermik
* 1 large egg
* 1 teaspoon pure vanilla extract

PREPARATION:
Center a rack in the oven and preheat the oven to 375 degrees F!. Butter or spray the 12 molds in a regular-size muffin pan or fit the molds with paper muffin cups!. Alternatively, use a silicone muffin pan, which needs neither greasing nor paper cups!.

Place the muffin pan on a baking sheet!.

Melt the butter and half the chopped chocolate together in a bowl over a saucepan of simmering water; or do this in a microwave!. Remove from the heat!.

In a large bowl, whisk together the flour, sugar, cocoa, baking powder, baking soda and salt!. In a large glass measuring cup or another bowl, whisk the buttermilk, egg and vanilla extract together until well combined!. Pour the liquid ingredients and the melted butter and chocolate over the dry ingredients and, with the whisk or a rubber spatula, gently but quickly stir to blend!. Don't worry about being thorough — a few lumps are better than overmixing the batter!. Stir in the remaining chopped chocolate!. Divide the batter evenly among the muffin molds!.

Bake for 20 minutes, or until a thin knife inserted into the center of the muffins comes out clean!. Transfer the pan to a rack and cool 5 minutes before carefully removing each muffin from its mold!.

6 (1 ounce) squares semisweet chocolate
1/3 cup unsalted butter
3/4 cup buttermilk
1/2 cup white sugar
1 egg
1 1/2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mini semi-sweet chocolate chips

DIRECTIONS
Preheat the oven to 400 degrees F (205 degrees C)!. Line 12 muffin cups with papers!.
In a small saucepan over low heat, melt the semisweet chocolate together with the butter!. Let stand until cooled, about 10 minutes!.
Lightly beat the egg!. In a small bowl, stir together the chocolate-butter mixture with the buttermilk, sugar, egg, and vanilla, until blended well!.
In a large bowl, stir together flour, soda, and salt!. Make a hole in the center of the dry ingredients, pour in the chocolate mixture, and stir until just combined!. Stir in the mini chocolate chips!. Spoon the batter into the lined muffin cups!.
Bake at 400 degrees F (205 degrees C) for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean!. Remove muffin tin from oven and let stand at least 5 minutes, before removing the muffins and letting them cool on a wire rack!. Serve warm or cooled; can be frozen as well

Grease 6-7 three inch muffin pan cups!. Preheat oven to 400 degrees!.
In large bowl with fork, mix flour, sugar, baking powder, cocoa, and salt!. Cut in butter until resembles coarse crumbs!.

Whisk together eggs, milk and vanilla in a separate bowl and then add to flour mixture!. Stir in chocolate chips!. Spoon batter into cups!. Batter will fill cups completely!. Bake until golden 25-30 minutes!. Serve warm

* 9 oz!. Self Raising Flour
* 8 floz!. Milk
* 4 oz!. Chocolate Chips
* 3 oz!. Light Brown Sugar

# Heat oven to 200°c/400F/gas mark 6!. Seperately weigh out the butter and the sugar!.

# Pour into a large mixing bowl and add vanilla essence/extract!.

# Add the two eggs!.

# Measure out the flour and baking powder together and pour into the bowl!.

# If you want double chocolate muffins, add 1 oz!. cocoa powder into the bowl now!.

# Add chocolate chips and milk!. Stir!.

# Whisk the mixture until it looks like mousse!.

# Pour into baking tray/muffin tin and cook for approx!. 10-20 minutes, until the muffins bounce back when gently pressed!.

For whatever reason, these muffins had a strange smell and taste after they were baked!. I couldn't detect it in the batter; it seemed to develop during the baking process!. The texture was also weird!. I was very careful not to overbake, but they still turned out hard and firm!. I've made lots of muffins (both homemade and packaged), but I won't be making these again!. I'll keep looking for a better recipe!. Until I find the perfect recipe, I'll stick with the cheap packet mixes you buy in the grocery store -- they're even better than these!. Sorry!

My 12-yr-old daughter made these and found the recipe fun and easy!. However, when she bit into the muffin, she found it too filled with air!.!.!.not "cakey" enough in texture!. We did substitute margarine for shortening, so this might account for the slightly drier texture!. But, we used good-quality chocolate chips, so that helped boost the taste and will ensure they all get eaten!

excellent, came out just great!. I used full size chocolate chips, no problem!. you definately will want a mixer to cream the sugar/shortening, but very easy and fast, came out light and delicious!. - thanks

Good, very tender, not overly sweet!. Like sponge cake!. I liked all the choc chips (be sure to use mini, as batter is thin and they would sink to the bottom)!.
