INGREDIENTS

1!. 400g bostonbluefish fillets(frozen)
2!. 1tablespoonbutter
3!. 1tablespoonlemon juice
4!. lemon pepper
5!. 1teaspoonfresh dill
6!. 3-4cupscauliflower
7!. 1/2cupcream cheese with garlic and herbs
8!. salt
9!. pepper
10!. 1green onion

DIRECTIONS

1!. FISH!.
2!. Preheat oven according to package!.
3!. spread butter evenly over FROZENblue fish!.
4!. evenly pour lemon over butter!.
5!. sprinkle with lemon pepper (I like lots)!.
6!. evenly sprinkle cut up dill over lemon pepper!.
7!. bake uncovered for 35 mins (or according to package)!. The butter and lemon juice penetrate the fish while cooking taking all the seasonings with it - don’t skip the buttering the fish stage - it IS necessary!.
8!. FAUX TATERS!.
9!. bring your cauliflower to a boil and continue to boil for 10 - 15 mins (the softer the better)!.
10!. Drain ALL water off!.
11!. mash together with your cream cheese salt and pepper!.
12!. mix in your cut up green onion at the end for extra zip of flavour and color!.
13!. Serve with another veg on the side - or as is!.Www@FoodAQ@Com

Baked Boston Bluefish

1 3/4 lbs bluefish, boned and butterflied
5 sprigs fresh parsley
1 green onion, sliced
1/2 teaspoon herbes de provence
1 stalk celery, small
salt
pepper
1 tablespoon olive oil
1 lemon, juice of

Preheat oven to 425 degrees F!.

Oil baking dish and set aside!.

With the fish opened, place parsley, green onion, herbs and celery on flesh and season with salt and pepper!.

Close fish over but do not tie!.

Place in baking dish and sprinkle with oil and lemon juice!.

Bake 14 minutes in the hot oven!.

Faux "Mashed" Potatoes

Ingredients
1 large cauliflower
I Can't Believe It's Not Butter
1% low-fat milk

Remove florets and steam until very soft!.

Put in food processor and pulse until fluffy!.

Season with "butter", milk, salt and pepper!.
