BEEF CARNITAS
* 4 pounds chuck roast
* 1 (4 ounce) can green chile peppers, chopped
* 2 tablespoons chili powder
* 1/2 teaspoon dried oregano
* 1/2 teaspoon ground cumin
* 2 cloves garlic, minced
* salt to tasTE
DIRECTIONS
1!. Preheat oven to 300 degrees F (150 degrees C)!.
2!. Place roast on heavy foil large enough to enclose the meat!. In a small bowl, combine the green chile peppers, chili powder, oregano, cumin, garlic and salt to taste!. Mix well and rub over the meat!.
3!. Totally wrap the meat in the foil and place in a roasting pan!.
4!. Bake at 300 degrees F (150 degrees C) for 3 1/2 to 4 hours, or until the roast just falls apart with a fork!. Remove from oven and shred using two forks!.Www@FoodAQ@Com

My boyfriend's mother is Puerto Rican and she sometimes makes this dish of chicken and rice!.

She buys this Goya seasoning with Con Azafran in it (sold in a box with individual packets in it) and another Goya seasoning called "Adobo", which is basically flavored salt!. Then she seasons the chicken breast with those two ingredients (i'm not sure of the exact measurements, sorry!!) along with some evaporated milk and deep fries the chicken on the stove!.

For the rice, she puts just a teeny bit of vegetable oil on white rice, just enough to coat it, and then she puts the Con Azafran seasoning and Adobo on the rice as well and mixes it all up, and then cooks it!. It's really really really good!!Www@FoodAQ@Com

Make some Taco Boats!.

Get some WonTon Wraps from your local grocery store!. They usually hang in the produce isle near the Tofu!. They come 60 to a package!.

I can make about 48-50 of these with two pounds of ground beef!.

Brown your ground beef ( 1-2 pounds) with chopped sweet onion (large or small)!. Drain and add the dry Ranch Dressing mix (1 pkg!. for 1 lb!. 2 for 2 lbs!.)!. Stir in well!.

While your meat is cooking take the Wonton Wraps and place them individually in a muffin tin to bake and form a small bowl!. Transfer them to a cookie sheet after you finish baking them!.

Spoon in your meat mixture to each bowl and add grated cheddar cheese to the top!. Place them back in the oven to melt the cheese slightly!.

Toppings can range from sour cream, guacamole, shredded lettuce, chopped tomatoes, corn, chopped green onions and salsa of course!.

They are fun to make and more fun to eat!. And believe me they will disappear so don't think you can make to many!Www@FoodAQ@Com

You can make quesedillas!. They're easy and great!. Cheap, too!. You could also make a layer dish!. Just get a portion sized serving bowl and layer it with beans, rice, vegetables, meat, and garnish with lettuce and a touch of sour cream!.Www@FoodAQ@Com
