I would use it, its only seven days and expiration dates are not all that accurate!. They are only put on there to protect the company that makes them - they don't want you eating something with mould on it and then sue them when you become ill because they didn't say you couldn't do that!
If you have any left after baking and you are not planning on using it again soon throw it out and buy some more when you need it!.Www@FoodAQ@Com

If it smells ok then I would use it!.
Me and a friend ate a ready meal out of the freezer and then realised that it was 12 months out of date!.!.!.!.didnt make us ill!.
also years ago they didnt have fridges or best before dates!.Www@FoodAQ@Com

I wouldn't, expiration dates are there for a reason, and baking it won't make a difference!. If you take a raw expired product and bake it!.!.!.all you get is a baked expired product!.Www@FoodAQ@Com
It will be fine, expiration dates are drastically exagerated!.Www@FoodAQ@Com
It'll be fine!. Trust me!.
BUT, I would prefer to use "crappy butter" any day!.Www@FoodAQ@Com
