Oriental fried rice- need help!!!?!
ok, we have looked at recipes on how to cook fried rice!.!. so, you steam it first, but when you follow directions on how to steam it, it comes out gooey and gummy! How do you prevent that!? or is that how it is supposed to be!?Www@FoodAQ@Com

for fried rice, the ric e must be quite dry to touch, and all the grains separate!. the absorption method of cooking rice is probably the best way to cook rice which will be used for frying!. here is what I do!. I place the long grain rice in a sauce pan and cover with water that is a deep as the width of my pinkie finger!. bring the rice to the boil then turn the heat to the absolute lowest setting and put the lid on and don't lift it up for at least 15 minutes!. What you are looking for, is all the water absorbed and when you run a fork through the rice, it fluffs up and separates nicely!.
alternatively you could boil the rice as usual, drain it and leave it uncovered in the refrigerator over night and all the excess moisture will evaporate, making it suitable for frying!.
it sounds like you are adding too much water to your rice when you are steaming it or using the wrong kind of rice!. remember, good quality, long grain rice will give you a better result!. and undercook, rather than overcook, as you will no doubt add some liquid to the fried rice and this will also be absorbed!.

I am from the Orient and I never use freshly cooked rice to make fried rice!. I use rice that I cooked the day before!. The rice has completely cooled and rested and I know it will hold its shape when I toss it with other ingredients in the fried rice!. I suggest you plan ahead when you want to cook fried rice again!.

When it is boiling, lower the heat to the lowest setting and let steam for 20 minutes!. Turn the heat off and leave the rice in the pot (DO NOT lift cover) until it is cool!.

You should also make the plain rice, gently spread it out on a large baking dish to cool!.
Then put it in the fridge overnight!.
Then make it into fried rice the next day!.

make sure to rinse your rice first, you will see that the rice water looks milky!. rinse until the water is clear, then do your recipe!. that takes out the starchy, gooey, gummy stuff!. enjoy!.Www@FoodAQ@Com
