These are my ingredients:
Measure & Ingredients:
1 tablespoon; Whole fenugreek seeds; soaked in warm water for 4-5 hours and drained !.
? tablespoon:Ground; roasted fenugreek seeds !.
2 tablespoons :Chile powder !.
? tablespoon :Turmeric !.
2 tablespoons :Black mustard seeds; roughly ground !.
3 tablespoons :Salt (that's what the recipe says!) !. 12 Limes; well rinsed
7 ounces (fl) vegetable oil
10 Dried Birds Eye chiles (widely available in Asian grocers - or similar)
4 1-inch sticks cinnamon
1 teaspoon Ground black pepper
1 tablespoon Ground asafoetida

Nimbu Ki Nimki
Preparation Time : 2 days
Cooking Time : 1 week
Serves / Makes : 1 kg
Ingredients
lemon i kg ,fresh ,thin skin ,big ,no marks
250 gram salt
Method
1!.wash lemon ,dip in water for 2 days
2!.after 2 days take out from water and wash and wipe
3!.rub on grinding stone (sil) lightly
4!.spread salt evenly in glass jar
5!.arrange lemon (full) on salt
6!. cover with salt ,repeat process ,last layer will be of salt
7!.air tight jar ,keep in sun for a few days !.till salt melts and lemon is soft but like rasgula
8!.achar is ready

1!.lemon 1kg
2!.blackpepper 2tsp
3!.ajwain 1tsp
4!.blacksalt 1tsp
5!.salt 250gm

1!.mix all ingredients
2!.!.slit lemon 4 pieces ,but not separated
3!. stuff masalas
4!. keep in jar
5!.keep in sun for 10 days
6!. achar will be ready

Ingredients :
6 lemon
? cup red chilli powder
? tsp haldi powder
? tsp methi seeds
? tsp mustard
? tsp hing
? cup salt
? cup cooking oil
Method :
Slice lemon into small dices, put salt, haldi, and keep it aside for 4 to 5 days!. Put red chilli powder to this lemon and stir properly!.
Roast methi seeds and dry grind it and keep it aside!. Heat oil in a pan, and put mustard, and hing and allow it to cool!.
When the above oil becomes room temperature, mix it with the lemon, and put the roasted methi powder!.

15 green chillies, chopped
? tsp haldi powder
? tsp methi seeds
? tsp mustard
a small pinch hing
2 tsp salt
2 tsp cooking oil
Method :
Cut lemon into small dices, add salt, haldi, and keep it aside for 4 to 5 days!. Put red chilli powder to this lemon and stir properly!. Roast methi seeds and dry grind it and keep it aside!.
Keep 2 cups of water to boil and add this to the soaked lemon!.
Fry mustard, hing, green chillies, and ginger in oil and add this to the lemon!.
