I own a bakery and most of our recipes or "formulas" as we call them have been used for years and years that their origan is unknown!. I also know many people throughout the country who own bakeries and we swap formulas as well!.

Chances are, whoever is the founder of a bakery already has "standards" set in their mind to pursue, usually standards set by other good bakeries!. I think it is most likely by this pattern that many are similar, rather than a uniform cookbook!.

One way to perhaps get into the mindset of bakeries and figure out the recipe for yourself: find several different recipes for brownies!. Then try to calculate the individual cost of making each!. Try making a choice based on price, either the most or least expensive!.Www@FoodAQ@Com

the authentic bakers aside, most bakery's use premixed flours for their bread, usually just add water, and these come with recipes!. These mixes are used throughout the country so that's why bread is so uniform nowadays!.Www@FoodAQ@Com
