Absolutely!! I make a stew with sweet potato, squash (whichever I have, butternut, acorn, sunshine), carrot, parsnip, onion and rutabaga! It's good with beef or turkey and chicken or beef stock!. Yum!!!! It's kind of a sweeter stew but so good!. Best wishes!!Www@FoodAQ@Com
yes, and so does parsnips, turnips, rutabega, any thing you like is good in beef stew!.
I make what my kids call "Refrigerator Stew"!. Any left over veggies from dinner get put in freezer packages and frozen!. All liquids drained from cans of veggies get frozen also!.
When I get enough stuff saved up, I cook my stew beef or beef bones in the saved liquids, fish that out and cut smaller, then dump into the boiling liquid all the frozen bits of veggies! There can be anything and everything in this soup kettle!.Www@FoodAQ@Com

It depends if you like Butternut squash, in my opinion I think it goes great in beef stew - along with your ingredients! :)
