I made peppermint bark with my aunt for Thanksgiving, and it's quite easy actually!. What you need is a a pound of white chocolate, a pound of dark or milk chocolate, whichever floats your boat, and peppermint candies or candy canes!.

Firstly, cut the chocolate into smaller chunks, so it melts easier and more quickly!. Do this with the white chocolate too, even though you won't need it until later!. You want to then melt the dark or milk chocolate first!. Melt it in a double boiler, which is when you place a pot inside another pot of water!. Then, place it over medium heat, and then let it melt!. Gently stir on occasion!.

Next, while the dark chocolate is melting, have someone unwrap the candy canes or peppermint candies, and then place them in a plastic Ziploc bag!. If the bag is a smeller Ziploc bag, fill it up a third of the way!. If it's a deeper bag, fill it up about a sixth of the way, or when you feel is a right amount!.

Once you have filled the bag to your liking, cover it with a washcloth or dish rag, and then take a meat hammer and smash the candies!. Don't make them too powdery; make sure they're still in pieces!. Then put the bag off to the side for later!.

Next, the chocolate should be melted by now!. Take a glass cooking dish and cover it with a parchment style cooking paper!. Then pour the chocolate into the bottom!.

Next, melt the white chocolate chunks in another double boiler!. Meanwhile, put the cooking dish to the side!.

Once the white chocolate is melted, pour it directly over the dark or milk chocolate that is already in the dish!. Spread it around until it completely covers the dish!. Then, spread the peppermint chunks over the top, and then cover with the parchment style cooking paper and place in the refrigerator until it is chilled!.

Peppermint Bark Recipe

Ingredients

* 12 oz!. of high-quality white chocolate chips or dark chocolate chips
* 5 regular sized candy canes, crushed up
* 1/2 teaspoon of peppermint extract

Method

1 Break up peppermint candy into little pieces!. Melt the chocolate according to the manufacturer's instructions!. Once melted, add the peppermint extract and stir!.

2 Pour the melted chocolate out onto a cookie sheet lined with wax paper and spread out with a spatula or wooden spoon!. Sprinkle the peppermint candy chunks on to the chocolate and gently press them in with yours hands!.

3 Place in the freezer for 5 minutes or until hardened!. Break into pieces and serve or store in the fridge in an airtight container!.Www@FoodAQ@Com

12 ounces good quality white chocolate, chopped
24 hard peppermint candies
Directions
Melt the white chocolate in a double boiler over medium heat or in a microwave, stirring every 30 seconds, until smooth!. Be careful not to scorch the chocolate!.

Place the peppermints in a resealable food storage bag and, using a rolling pin, tap the candies to break into small pieces!. Place the crushed candies into a strainer with medium holes and shake over another bowl - only the very large pieces should remain in the strainer!. Add the melted chocolate to the small pieces and stir to combine!.

Line a baking sheet with waxed paper and pour the chocolate-candy mixture onto the paper!. Using a rubber spatula, spread smooth to a thickness of about 1/4-inch!. Press the large peppermint pieces onto the top of the mixture and transfer to a refrigerator to firm!.

When firm, break the bark into bite-size pieces and place in an attractive serving bowl or package in airtight containers to give as gifts!. Serve at room temperature!.

Peppermint Bark
12 oz chocolate chips
1 pound white chocolate chips
1/2 teaspoon peppermint extract (I used 3/4 teaspoon)
1/2 cup peppermint candy, crushed

1!. Preheat oven to 250!. Line a 9x13 pan with foil, letting it hang over the sides!. Spray foil!. Pour the chocolate chips in an even layer on the foil!. Place in oven for 5 minutes or until almost melted!. Remove from oven, smooth with an offset spatula or knife!. Place in refrigerator until cold and firm, about 20 minutes!.
2!. Melt white chocolate chips in a double boiler or in a metal bowl over simmering water (don’t let bottom of bowl touch water), until chocolate is almost melted!. You can use your microwave for this if you’re brave! Remove bowl from water and stir until completely melted, stirring in extract!. Let cool a little bit so it does not melt the chocolate layer when you pour it on top!. Pour this over chocolate layer, and, working quickly, spread to cover!.
3!. Sprinkle with crushed candy!.
4!. Chill until both layers are firm!. Lift foil out of pan and shake off excess candy!. Trim edges!. Cut into 2” wide strips!. Peel bark from foil and cut each strip as desired!. Chill in covered container!. Makes about 2 pounds!.Www@FoodAQ@Com

Directions
Place candy canes in a plastic bag and hammer into 1/4-inch chunks or smaller!. Melt the chocolate in a double boiler!. Combine candy cane chunks with chocolate (add peppermint flavoring at this point if desired!.) Pour mixture onto a cookie sheet layered with parchment or waxed paper and place in the refrigerator for 45 minutes or until firm!. at christmas I had an excellent recipe:

melt the white or almond bark in double boiler, add in 1 teaspoon peppermint extract per 2 cups melted bark!. Crush about 5 medium candy canes per 2 cups to near powder!. Stir them into the bark and pour it onto a jelly roll pan lined with aluminum foil!. Score and cut in 1 inch pieces!. You can add more crushed candy canes to the top if you want and press them in!.Www@FoodAQ@Com

1 1/2 lbs!. white bark
1/2 pkg!. peppermint rounds, crushed

Using a 13 x 9 inch pan grease the bottom lightly!. Put crushed peppermints in bottom, covering with melted white bark!. Cool and break into pieces!.Www@FoodAQ@Com
