Meatball Soup with veggie stock instead of beef?!


Question: Meatball Soup with veggie stock instead of beef!?
I have these great vegetarian meatballs (pre-made), and I'd like to use them to make Meatball Soup!. All of the recipes I've seen call for beef broth, though!. I'm wondering if veggie stock will work, or if it's just too different in flavoring from beef broth!. If so, is there anything (vegetarian) that I could add to make it work!? If you have a recipe, that would be great!.!.!.Www@FoodAQ@Com

It's beef-style stock!.

There are definitely other brands!.

Just check your local health food store!.

I think it will be the best if you make your own veggie stock and it's not that hard,but definettley worth the effort!.A little time consuming,but a great way to get in a meditative state while cooking!.
Depending on how much stock you need,use fresh cold water in a pot to start!. let simmer and then add fresh carrots broken in two,celery broken in two,red onion choppped in 4ths,, Roma tomatoes,cut in 4ths!.,leeks,sliced,be sure to rinse off the muddy bottoms first,garlic with the whole cloves pressed,parseley,no need to chop it,a bunch of fresh basil,a splash of red wine or balsamic vinegar!.Simmer for about an hour and a half and then strain out all the solids!.Return broth to pan,drop in meat balls to cook,throw in some chopped fresh basil and if you like some Italian canned tomatoes!.
Top with fresh graed Parmesean cheese and croutons!.Garnish with a couple of fresh Basil leaves!.Enjoy!.!.!.Www@FoodAQ@Com
