Veg for soup ?!


Question: Veg for soup !?
I am going to make lentil soup with leek, carrots and potatoes!. Do I have to peel the veg or can I just cook it unpeeled!? It will then be liquidized!. Thanks!Www@FoodAQ@Com

Amber, you have to be very careful with leeks!. Whole, they are full of sand!. They need to be taken apart and very thoroughly washed!. Of course, you should chop them!. I would'nt use unpeeled potatoes either!. I don't know why you would puree lentil soup!. Try leaving it as is when it's cooked!. also, try adding some Spinach in the last few minutes!. Very nutritional and very good!!Www@FoodAQ@Com

I usually leave my veg un peeled as it is more nutritious that way - I always wash it then roughly cut it up before cooking - if you are going to blend it then it doesn't matter how it looks while cooking and you get more of the goodness!. Hope that helpsWww@FoodAQ@Com

I would peel them!. (I make lentil soup with onion, carrots and ham!.) I never though about putting potatoes in, but if I did, I wouldn't want the peels!.Www@FoodAQ@Com
