A popular style in Hong Kong is sweet soy sauce chicken wings!. You can grill them or poach them in sauce!.
You should make enough of the marinade for the wings to steep in if grilling, or if you're poaching the wings, then enough to fill the saucepan/small pot so that the wings are completely covered!.
Ingredients:
50:50 ratio of dark and light soy sauce (amount depending on above, for poached wings I usually use 5 cups or so)
White/brown sugar (depending on how much marinade you're making!. If you prefer sweeter wings, then add more sugar!. You can also try substituting honey if you like!. I usually use a 5:1 ratio for soy sauce:sugar but this is personal preference)
3-4 slices of fresh ginger
2-3 garlic cloves, sliced
teaspoon of cinnamon
teaspoon of star anise or Chinese 5-spice powder (optional)
pinch of black pepper (optional)
1!. Defrost the chicken wings!.
2!. Put them in a bowl or Tupperware container with the marinade!. Make sure the wings are covered in the sauce on both sides!.
3!. Leave for an hour!.
4!. If grilling, then take the wings out, pat them dry, and then grill them!.
5!. If poaching, then remove the wings and set aside!.
6!. Pour the whole marinade sauce into a pot/saucepan!. Add a cup of water!.
7!. Bring to a boil!. Once the sauce is boiling, then add the wings, and immediately lower the temperature to a simmer!.
8!. Cook 15-20 minutes or until chicken is cooked all the way through!.
The chicken and sauce is really good with broccoli and other vegetables over rice!. You can also try putting cooked hardboiled eggs or mushrooms into the sauce if poaching!.Www@FoodAQ@Com
