Question about eggs and omelets?!


Question: Question about eggs and omelets!?
I usually just scramble my eggs and cook them in a stainless steel pan with a 1/2 tbsp butter!. The eggs just bubble up and come out really nice!. No sticking whatsoever!. There is actually still butter left in the pan!.

But today I tried to make my eggs with veggies!. I just cooked up some veggies on the side and then added them to my scrambled egg mixture, and I also added some shredded cheddar cheese!. Then I used double the butter (1 tbsp) since I added more things to my eggs!. But my veggie omelet surprisingly stuck to the pan so badly that it was inedible!. I had to throw it out and it took me a while to wash the pan!

What went wrong!? I don't get it!. I always had success with my stainless steel pan in cooking plain eggs but when I add extra things like veggies it doesn't seem to work the same!. Why is this so!?Www@FoodAQ@Com

My method is: saute the veggies in the butter, then add the beaten eggs when the veggies are soft (onions transparent, etc!.)!. When the eggs are done -- here comes the tricky part -- fold in the shredded cheddar cheese because it is the cheese that makes it stick to the pan!. Just fold it in until the cheese is about melted, it will continue to melt after you remove it from the pan and it shouldn't stick to the pan!.Www@FoodAQ@Com

It probably comes from the residue of the cooked vegetable!. It is better to saute them in a seperate pan, then add once the eggs have set up somewhat firmly about 1 min!., and top with cheese before you fold over!.Www@FoodAQ@Com

I just chop my veggies very small than spray my pan and add my eggs an when they are cooked I toss the veggies on top of half of it add my cheese and fold it and when cheese is melted it is time to eat!. No need to cook the veggies if they are chopped fine!. Better for you also and you do not need all that butter!.Www@FoodAQ@Com
