How can I make my choc. chip cookies more moist?!


Question: How can I make my choc!. chip cookies more moist!?
I've been baking some low fat, low gluten, sugar free cookies, and they taste pretty good; but they turn out a little too dry!.
Is there something I can add to make them moist w/o adding sugar or fat !?
In place of chocolate chips, I break up some 85% chocolate bars,and I use olive oil and Smart Balance butter substitute for shortening!.
I use a flower substitute made with a mixture of rice flour, potato starch, and tapioca flour, and I use Stevia to add sweetness!.Www@FoodAQ@Com


Answers:
Replace some of the oil with apple sauce (or canned pumpkin works too) and replace the olive oil with canola!. Reduce baking time!. The low-gluten recipes tend to crunch up pretty quick so keep your eye on them in the last minute or 2!.

Edit to the follow up: I'd try 10-12 minutes at 350!. That's a typical cookie bake!.Www@FoodAQ@Com

Don't bake them as long!.!.!.maybe add alittle more smart balance or milk/soy milk (whatever you prefer) to the dough!.Www@FoodAQ@Com

How about adding some shredded coconut which you've soaked in water or milk overnight!? The word moist just brings coconut things I've had in the past to mind, for some reason!. But I guess it will change the taste quite a bit!.Www@FoodAQ@Com
