Tri tips are not going to be very tender unless you utilize moist heat cookery (roasting, crock pot, etc)!. As a steak, unless you tenderize and marinate the crap out of it, it will not be tender and even then won't be all that tender!. This cut of meat comes from an area where the flank and round meet (both areas not best known for tenderness to begin with)!. Any muscle utilized more in locomotion than in stabilization and support, will never truly be considered tender without multiple hours of work put into it!. Additionally, the longer you cook a steak, the less tender it will become!. Therefore, you wanting to cook an already tough cut of meat to a point it will be made tougher is not going to get you a tender steak!.

I suggest if you actually want to use this piece of meat and make it tender, either wait to eat dinner tonight at midnight or put it off for another day!. Your only hope of eating it tonight is making kabobs or stir fry out of it, but still keep in mind, it's not going to be tender that way!. As a steak though, it very well could be a miserable eating experience if you try using it tonight!.

I would suggest in the future, to get something called a flat iron (specific muscle name is the infraspinatus)!. It's also known as a patio steak or top blade steak!. The infra is actually 2nd in tenderness only to the tenderloin even though it's from the chuck primal!. It sits in the U-shaped scapula and unless cattle figure out how to lift their front legs out to their sides, it's going to remain tender because it's not used in locomotion!.Www@FoodAQ@Com

do a dry rub, then spray a cooking spray on meat to seal in juices, prepare over indirect heat!. after prepared, cover with foil and let it rest for 10 min!. it will be fineWww@FoodAQ@Com
