I know i have to let the gelache cool on my cheesecake but?!
ok so the cheese cake is done and i've poured the gelache on top and now i need to let the gelache cool SO my !? is do i need to cover it with ALUMINIUM paper so that the gelache wont dry!? or is it fine as is!? thanks!.Www@FoodAQ@Com

No don't cover it!. Sorry to be nit picking but it is not alumnium paper!. It is alumnium foil or tin foil!.
Once it cools you can cover it lightly but gice it a good 2-3 hours first!.Www@FoodAQ@Com

It will be fine left uncovered!. If you cover it, moisture could develop on the chocolate and that would ruin your ganache!.Www@FoodAQ@Com
