Answers:
It allows the starch rinse out, and to have them cold!.
Cold potatoes cook far better in some cases, this could be one of them!.

Fries and roast potatoes are other examples!.

This line confirms my point!.

"Melt remaining 2 tablespoons butter and bacon fat in pan, and fry the potatoes until crisp and medium brown"!.Www@FoodAQ@Com

It must be in the nature of the recipe!. It would seem that your potatoes would absorb the water but if they are in the fridge perhaps the purpose is twofold, to keep them rigid and crisp, and to keep them from discoloring!.Www@FoodAQ@Com

It makes the potatoes easier to cook and more likely to soak the juices of whatever else it is that your cooking!. It also makes easier to peel them!. It shouldn't alter the recipe too much to skip that step!.!.!.Www@FoodAQ@Com

The soaking part will be to get rid off excess starch in the potatoes and make them drier!.
As to whether you can skip it, probably but it might turn out nicer if you soak them!.
Good luck!.Www@FoodAQ@Com

Soaking is just to remove some starchiness, which may turn into stickiness in the pan!. You can skip the step it if you like!.Www@FoodAQ@Com

Well this recipe doesn't call for red potatoes!. I would go with russets, and yes saok them to get rid of some starch!. Or just rinse them very very well!.

The red potatoes may not work as well for this recipe!.Www@FoodAQ@Com

The recipe didn't specify red potatoes but the point of soaking is to let the potatoes get rid of some starch!. Your dish could turn out not tasting like it should if you skip it!.Www@FoodAQ@Com

No need unless you plan on cutting them and then putting them aside for a little while before cooking!.

Unless you're frying them, then it get's rid of excess starch and allows better browning!.Www@FoodAQ@Com

Sure you can skip that step!.Www@FoodAQ@Com

if you follow the recipe is no possibility to go wrong!.Www@FoodAQ@Com

The only time I've ever soaked my potatoes in cold water was when I didn't want them to turn brown!. I hope you send me some!Www@FoodAQ@Com

No need to soak the potatoes!. You will be fine without doing it!.Www@FoodAQ@Com

I think the soaking is to rid them of some of the starch!. I could be wrong though!.Www@FoodAQ@Com

Yes you really do, now quit being lazy and do it!.Www@FoodAQ@Com
