Do I really need to soak red potatoes in water before cooking?!
I have a tortilla patata recipe I am doing, which calls for sliced red potatoes!. The recipes says to cut them and then soak in cold water in the fridge for 1/2 hour!. Is this necessary or can I skip that step!? I've never done that with potatoes before!.!.just seems weird to me!. Oh, here's the recipe!.

It must be in the nature of the recipe!. It would seem that your potatoes would absorb the water but if they are in the fridge perhaps the purpose is twofold, to keep them rigid and crisp, and to keep them from discoloring!.Www@FoodAQ@Com
It makes the potatoes easier to cook and more likely to soak the juices of whatever else it is that your cooking!. It also makes easier to peel them!. It shouldn't alter the recipe too much to skip that step!.!.!.Www@FoodAQ@Com
The soaking part will be to get rid off excess starch in the potatoes and make them drier!.
As to whether you can skip it, probably but it might turn out nicer if you soak them!.

Soaking is just to remove some starchiness, which may turn into stickiness in the pan!. You can skip the step it if you like!.Www@FoodAQ@Com
Well this recipe doesn't call for red potatoes!. I would go with russets, and yes saok them to get rid of some starch!. Or just rinse them very very well!.

The recipe didn't specify red potatoes but the point of soaking is to let the potatoes get rid of some starch!. Your dish could turn out not tasting like it should if you skip it!.Www@FoodAQ@Com
