me and my wife are making huge cut backs on calories and dairy we wont be going completely vegan but I would like to have some good vegan recipes

I would say going vegan is a little far for less on the calories but then again you did say you were not going all vegan would just like to have some recipes looks like some people are not very smart and cant read either but then again that goes hand in hand doesn't it !?
I would say lots more salad i don't know about you but I love salad and unlike the rest of America im not so fond of ranch dressing any way a little oil and vinegar will suit me just fine how about you !?Www@FoodAQ@Com

How do you figure vegan is cheaper on the finances and calories!?
fresh produce is good, but also expensive!. meat is cheaper in the long run!.
When cooked properly, you can cut calories without sacraficing meat and dairy!.
first limit dairy to 3 servings a day (ada recommended)
fat to 5 teaspoons a day
cook on a george foreman, or bake or broil or boil your meat rather than fry!. Eat more chicken, and fish if you are concerned about the calories in beef and pork!.

Sunset Crater Chili
2 cups TVP, reconstitute with 2 tbsp soy sauce and water to cover
3 onions, chopped
2 cans black beans, drained
2 cans pinto beans, drained
2 cans corn
1 can green chilies
2 can diced tomatoes
1/4 cup minced garlic
1 tsp chipolte powder
1 tbsp chili powder
1 tsp salt
1/2 tsp pepper
1 tsp basil
1/2 tsp cinnamon
1 tsp cocoa powder
1 tsp cumin
2-4 cups water
Add all ingredients to crockpot!. Add water, I prefer extra water for more liquid with my rice!.
Serve over rice!.
Garnish options:
diced scallions
diced boiled eggs
shredded cheese
diced avocado
SPICY SESAME NOODLES
1 8-ounce package of soba noodles
2 tablespoons soy sauce
3 tablespoons rice wine vinegar
2 tablespoons sesame seed oil
1 tablespoon hot chili oil
1/4 cup sesame seeds
Boil soba noodles in water until tender!. Drain noodles and rinse in cold water!. Combine ingredients and mix until everything is evenly dispersed!. Refrigerate for 2-3 hours before serving
POMEGRANATE BEET SALAD
8 beets, peeled and cubed
Seeds from 2 pomegranates
Juice of 3-4 lemons
2 cups pomegranate juice
Crushed red pepper, to taste
Boil beets until tender!. Drain beets and rinse under cold water!. Combine ingredients and chill for several hours!. When ready to serve, strain solids beet cubes and pomegranate seeds from the liquid!.
OPTIONAL: Instead of pomegranate seeds, use fresh orange bits!.
TURKISH SPINACH AND LENTIL SOUP
(I don't always measure my ingredients, so these amounts are approximate!.)
6 cups vegetable stock
1 cup green lentils, soaked in water overnight
1/2 cup barley
1 bag baby spinach, chopped
2 large tomatoes, chopped
1 onion, chopped
4 garlic cloves, finely chopped or pressed
1/4 cup tomato sauce or tomato paste
1/4 cup parsley
Cayenne pepper, to taste
Black pepper, to taste
Drain lentils from soaking water and place in a pot with fresh water!. Boil lentils until tender, then drain and set aside!. In a separate pot, boil barley until tender (follow box instructions) !. Drain barley and set aside!. Combine all ingredients except spinach in a large pot and simmer on low to medium heat!. Add spinach shortly before serving!.
LEBANESE VEGETABLE SOUP
(I rarely measure my ingredients, so these are approximations!. Feel free to adjust ingredient amounts to your taste!.)

1 carrot, shredded

Parsley, to taste
Cumin, to taste

Well the best Vegan recipe I know is how to make vegan chocolate chip cookies!. Absolutely amazing, I highly recommend it!.
Take these ingredients :
2 cups unbleached flour
2 tsps baking powder
1/2 tsp!.salt
cinnamon to taste (optional)
vegan chocolate or carob chips - put in as many as you like
1 cup raw sugar (turbinado #1, sucanat works too but sucks up a lot of the moisture)
1/2 cup canola or vegetable oil
1 teaspoon vanilla
1/4 cup water
Directions:
VERY IMPORTANT-make sure all ingredients are at room temperature!. It will work if they're not at room temp but it works MUCH better if they are!. also while your oven is preheating put the cookie sheets you are going to use on top of the oven so they get preheated as well!. Preheat oven to 350!.
In a large bowl mix flour, baking powder, salt, cinnamon (if you choose)!. Add chips!. Make a well in the center and set aside!.
In a medium size bowl mix vegan sugar and oil!. Mix it well!. Add the vanilla and then add the water!. Mix it well!. Add the wet to the well in the dry!. Mix it well but be careful not to overwork it!. Add more chips if you need to!. Spoon onto ungreased cookie sheets!. Put them in the oven!. Bake for 5 minutes and then flip and rotate the sheets!.(top to bottom,and 180 degree rotation) Bake another 4 minutes and check them!.
The cookies are done when they seem a little bit softer then you want them to be!. They will harden up some as they cool!. I usually go in two minute increments from here until they get to where I like them!.
Take them out when they are done and move them to wire cooling racks!. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks!.
These cookies have come a long way, lots of time and tasting spent on getting them to where they are now!. Vegans and non vegans LOVE them!. In the words of my 6 year old son-Mom, you're the greatest because you know how to make the best cookies!. Enjoy and let me know if you have questions!. Sweet travels!.

It's actually a very unhealthy style of eating, actually killing and sending hundreds to difficult rehab!. Make sure you take multi-vitamins and are getting enough fat to metabolize your vitamin D and B vitamins as the eating choices simply don't provide what your body needs to survive!.Www@FoodAQ@Com

Slice thick pieces of XFIRM tofu and dry with paper towel!.
Dredge in heavily seasoned flour (garlic powder, salt/pepper), then soy milk, then mixture of HALF REG BREAD CRUMBS AND HALF PANKO BREAD CRUMBS!.
Bake in 400 oven for 20 mins!.
Top with vegan tomato spaghetti sauce and shredded vegan mozzarella cheese!!!
Bake for another 15 mins!.
Top the whole thing with FRESH BASIL LEAVES torn up!.Www@FoodAQ@Com

1 tsp vanilla
pinch salt
Whisk dry ingredients well!. Beat margarine and vanilla until fluffy!. Add dry ingredients to margarine!. Mix just until combined!. Press or roll out to about 3/8" thick, and cut into small squares or use simple cookie cutter!. Prick a few holes in each with the tines of a fork or toothpick!. Place on parchment paper!. Dust tops w/ a bit of granulated sugar to make them sparkle!. Bake at 325oF for approx!. 15 mins or til golden brown!. about 3 dz!.
