Here's a recipe for a simple potato soup:
You'll need 2 bunches leeks (if possible)!. Clean thoroughy and use white parts only, slicing into thin slices!. Cook potatos and leeks in chicken broth until fork tender!. Don't drain!. Remove 2 cups of the cooked potato/leek mixture and to the remaining ingrediants, add 1 T kosher salt, 1 tsp fresh ground pepper, 1 T thyme, 1 to 2 cups sour cream, 1 cup shredded cheddar cheese, 1/2 to 1 cup milk!. Blend potato/milk mixture until reasonably smooth!. Add remaining potatos and coarsely mash, leaving chunks!. If you prefer a smooth soup, blend them all together!. If you don't have leeks, and don't want to get any, then use a regular onion, peeled and sliced thinly!. If you are adventurous, add crumbled cooked bacon and a little bleu cheese to enhance the flavor!.Www@FoodAQ@Com

you will need:
-6 potatoes
-8 ounce sour cream
-bottle of parmesan cheese (your not going to use the whole jar, but its good to have enough)
-milk
-salt shaker
directons:
1!.turn on your oven to 350 degrees!.
2!.peel the potatoes with a potato peeler, then slice them not too thick but not paper thin (try to slice them the same size so they can cook evenly)
3!.in a oven safe cooking ware ( i use a glass bakeware for this) now layer the bottom of the dish with one layer of poatoes then layer with some of the sour cream (dont put too much nor too little, just enough to coat the layer of potatoes) then sprinkle some parmesan cheese all over the dish then sprinkle a bit of salt over the parmesan cheese you just added then dribble some milk* over everything you just layered
4!.then layer again with potatoe, sour cream, cheese, salt and milk until you have nomore potato slices
*after you finished layering check and make sure you put enough milk because the potatoes will cook and soften in this, so if you think it needs more add more milk!.
5!.then place your dish in the oven and cook for about 45 minutes to an hour!.!.!.i made this the other day and it took a lil less than an hour!.!.!.!.OR cook until the top part of your casserole is brownish be careful not to overcook it
An hour seems like a long time to wait for some potatoes to cook but trust me this is delicious!!!!Www@FoodAQ@Com
