Quick NUTRITIOUS meal ideas?!
I have just started a new job, and am about to go back to Uni !.!.!.I have a husband and 2 kids!.!.!.so as you can imagine !. like many of us, I am rather busy these days!.
I am in need of ideas for fast, easy meals for dinner!.
It is important to me that I do not feed myself or my family junk food just because I am busy!

You sound like a real busy mom!.
if you have a slow cooker, just dump in carrots, potatoes, onions, peas, corn, etc, some chicken/beef/pork pieces lastly some chicken broth and let it cook from morning till the evening when you get back from work / uni, you will have a good hearty stew waiting for you, just add in some seasoning and serve hot with warm wholemeal rolls with butter!.
if you need it to be quick, sometimes I buy ready BBQ whole chickens from the store and strip the meat off it, store them into containers and freeze them in portions!. Good for adding into egg omletes with onions, tomatoes and cheese!. Great for breakfast or lunch!.
Stir fries (such as fried rice, pasta) are also quick and easy with whatever you have in the fridge!.
Just another tip, it is always good to freeze your groceries into portions you know you want to cook!. Eg, instead of 5 kg of chicken drumsticks in one plastic bag, divide the portions into meals!.
