What sort of wine should I have with Tagliatelle Carbonara?!

Inexpensive!? I'd recommend a Villa Antinori Chianti Classico
Mid-Range!? Just about any Vino Nobile di Montepulciano (I prefer
the Poggio and Gattavechi
Expensive!? A good Brunello di Montalcino
These are all reds and will hold up well against the carbonara!. As
far as whites go!? I guess any of the Vernaccia di San Gimignano
would do fine!.
Kind of obvious, I know, but I prefer the wines of Tuscany
when it comes to Italian wine!. Whatever wine you choose, just

As a former chef I would say with the sauce being slightly spicy from the black pepper, and the smokiness of the bacon and richness of the egg and cheese, a light Italian white, Soave or Colli Albanini, a French Chablis or go the other way and have a nice spicy German Gewurztraminer or RieslingWww@FoodAQ@Com
