This is my own creation, borne of wanting breakfast, but never really wanting to do the cooking first thing in the morning!. It keeps for days in the fridge, and freezes well too!. (I'm still working on bacon and corned beef hash variations)
"Breakfast Pie"
1 pie shell (homemade is best of course, but premade should work too)8 oz!. cubed cooked ham (I use half a small canned ham)
OR
8 oz!. loose sausage, cooked (one half of the plastic-wrapped 'tube' sausage works well)
4 oz!. shredded cheddar cheese
1/2 can of canned potatoes, diced
3-4 eggs, beaten (add a little milk or cream if you like)
black pepper
garlic powder
onion powder
a little butter
Put the meat at the bottom of the pie, shredded cheese on top!. Add the condiments (but not the butter) to the beaten eggs, pour this over the meat and cheese!. Top with the potatoes, dab some butter on top!. Bake for 50-60 minutes (or until done, eggs should be fluffy and potatoes just beginning to brown) at about 350 degrees!.
(If you do two at a time, it takes a whole small ham or a whole thing of sausage, a whole can of potatoes, and a whole 8 oz!. bag or bar of cheese!. No leftovers that way!. also, I've found it's easier to cook the sausage in advance in the oven, 400ish, and then drain it after, soak the cooling stuff on a paper towel!.!.!.)
Oatmeal is nice too!. I add a little brown sugar, cinnamon and butter, and often some dried fruit!. I usually put in an oven-safe bowl and bake it while I'm getting ready in the morning!.
Hash brown like you're talking about are just raw potatoes, cubed, with a little onion and/or garlic powder and maybe pepper, fried in hot eggie oil or butter!. Smush them into shape with the flipper, flip when the first side gets brown!. Get the pan hot first for best results!.Www@FoodAQ@Com

I don't agree with No 1 about soaking your hashers in water!. I just stick mine in a fry pan and dry fry!. Cut them up if you wish, but I like mine whole with a melted slice of cheese on them!. They don't take long and don't need high heat as they are already cooked!. (frozen ones I buy are)
There are so many ways you can make the same thing in different ways, Eggs over easy, medium, hard, scrambled, boiled, poached, quiche and others!.
Start your meats first, then your hashers!. Lastly your eggs to get everything on the plate hot!. You can also do egg sandwiches with ham and cheese!.Www@FoodAQ@Com
