Question: Does anyone know how to fix a Georgia Country ham!?

GEORGIA COUNTRY HAM
10 pounds country ham, Georgia (10 to 12)
1 cup brown sugar
1 cup bourbon or sherry
1 cup water
Have the hock cut off ham so that it will fit into a roaster!. Soak ham overnight in cold water and scrub the ham with a stiff brush!. Change water a couple times to get rid of the excess salt!. Mix sugar, bourbon and water; press into the fat of ham!. Cover tightly with foil in roaster and bake at 200 degrees for 8 hours!.

1 Apple,large,tart,quartered
1 Onion,large,peeled/quartered
3/4 c Molasses,dark
Brown sugar
Dry mustard
Worcestershire sauce
Pineapple slices,drained
Whole cloves
Juice from canned pineapple
Cola,bottled

Georgia Country Ham Instructions:

* - old-style dry cured, about 10 lb!.

Soak ham in water overnight; next day, drain and scrub clean - a small steel brush is the best implement!.
Place in a large pot and cover with fresh cold water; add the apple, onion, and molasses!.
Let simmer over low heat for 25-30 minutes to the pound!.
Remove from heat and let cool in cooking liquid!.

Drain ham; remove skin and all but a thin layer of fat!.

Preheat oven to 350'F!.

Place ham in roasting pan!.
Make a thick paste of brown sugar, mustard, and Worcestershire sauce!.
Cut pineapple slices in half and arrange in rows over ham!.
Stud with whole cloves!.
Pour pineapple juice and cola around ham!.
Bake uncovered, basting frequently, for about 45 minutes, or until ham is heated through and sugar mixture is transformed to a glaze!.

Usually country hams are VERY salty, and need to be soaked in water overnight to get some of the salt out!. You can soak the whoel thing, a hunk, or a few slices!. After soaking, pour off water, then heat in a skillet!.Www@FoodAQ@Com
