What is wrong with this cookie recipe?!


Question: What is wrong with this cookie recipe!?
The icing was great but the cookies where very, very, very dry and fell apart when I tried to frost them!. I have never made any type of doughs or breads before so I have not a clue!.

Lemon cookies
INGREDIENTS
? 3/4 cup butter, softened
? 1/3 cup confectioners' sugar
? 1 tablespoon lemon juice
? 1 teaspoon lemon zest
? 1 1/4 cups all-purpose flour

DIRECTIONS
1!. In a medium bowl, cream together 3/4 cup butter and 1/3 cup confectioners' sugar until smooth!. Stir in 1 tablespoon lemon juice and 1 teaspoon lemon zest!. Combine the flour and corn starch, and blend into the lemon mixture to form a soft dough!. Divide dough in half, roll each half into a log about 8 inches long and 1 inch in diameter!. Wrap in plastic wrap and refrigerate for 2 hours, or until firm!.
2!. Preheat oven to 350 degrees F (175 degrees C)!. Cut each roll into 1/4 inch slices and place onto the cookie sheet!.
3!. Bake in the preheated oven for 8 to 12 minutes, or until set!. Cool completely before frosting!.
4!. In a small bowl, blend together 3/4 cup confectioners' sugar, 1/4 cup butter, 1 teaspoon lemon juice, and 1 teaspoon lemon zest with an electric mixer until smooth!. Frost cookies and allow drying before serving or storing!.Www@FoodAQ@Com

What you are making is essentially a frosted, lemon flavored shortbread!. Which sounds like a great idea!

The cornstarch is used to make the texture of the cookie even more delicate!.

I would use the following recipe:

2 cups (260 grams) all-purpose flour (or 1 1/2 cups flour & 1/2 cup cornstarch)

1/4 teaspoon (2 grams) salt

1 cup (2 sticks) (226 grams) unsalted butter, room temperature

1/2 cup (60 grams) powdered (confectioners or icing) sugar

1 tablespoon (4 grams) lemon juice

1 teaspoon lemon zest

Then follow the instructions you were using!. If you bake them a few minutes more they will become slightly less likely to crumble when frosted!. You also may be slicing them too thin!.

Bret I bake every day and this recipe is not right!. For one thing where are the eggs!? Alter your recipe to this add 2-3 (egg yolks) only as it is a lemon cookie and add 1/2 tspn of baking powder!. I am not crazy about the corn starch in this recipe that by itself will make it really dry!. If I were doing it I woud eliminate the corn starch and add xtra flour to replace it It should be really good then Best of luck GranmatictacWww@FoodAQ@Com

They have very little moisture in them at all!. I would have been surprised if they hadn't fallen apart!.My guess for which one of the things doesn't belong would be the cornstarch, but maybe that is just me!? If this is your first attempt at cookie making, might I suggest a chocolate chip cookie recipe off the back of the bag!? These are great for first timers, I don't think sandy cookies are something you should attempt your first time out, they are far too fussy!. If you are dead set on the lemon cookies, maybe do a search for a different recipe online for the same cookie!. I think there is a great recipe for cookies from a lemon box cake mix by one of the major brands like betty crocker or pillsbury!. Hope this helps!Www@FoodAQ@Com
