Why a convection oven?!


Question: Why a convection oven!?
Should I look for a convention oven versus a regular oven!. What's the difference!?Www@FoodAQ@Com

I have a viking convection oven!. As the others said, it's a fan circulating heat!. The fan does a couple of things!.

1) The oven is evenly heated (no hot spots)

2) Cooks quicker because the blowing heat around the food accelerates heat transfer to the food

3) Browns roasts betterWww@FoodAQ@Com

More even heating!. But beware, convection ovens also cook more at the same temperature than non-convec!. For example if you have a recipe that asks you to bake at 350 you might have to lower it to 325 so that it doesn't burn!. (I am not sure of the exact amount you have to lower it!. I used to know, because my parents have a convection oven, but I just have a regular one so I haven't converted in awhile!.)Www@FoodAQ@Com

The next oven I buy will definitely be a convection oven!. I once had a portable c/o and I love to bake with it!. I NEVER had a burned pie crust with the c/o!. They are fabulous for baking!.
