What would go good with a chicken peanuty dish?!


Question: What would go good with a chicken peanuty dish!?
Yikes! I'm having people over for dinner tomorrow night and don't know what to serve!. I'm going to make a chicken thing with a peanut sauce to serve over rice but think I should have some veggies or a salad!. I am a terrible cook so I need to keep it simple!.

Any ideas would help

A simple salad with maybe a light carrot dressing (like the ones that come with the side salads when you order sushi)!. Or why not simply sautee some zucchini, peppers and onions to go with it!.Www@FoodAQ@Com

Whenever I serve something hot with peanut sauce i like tot counteract it with a cold Asian vegetable salad!. They work really nice together!.


2 1/2 cup fresh green beans , trimmed
2 cup Asparagus, fresh , cut into 1 inch pieces
1 1/2 g snow peas , halved
1 3/4 cup Sprouts, mung bean, mature, fresh
1 1/2 cup red bell peppers, sliced
8 oz Corn, cob, mini, gold, frozen , chopped, about 1 cup (or canned)
3/4 g Nuts, chestnuts, Chinese, cooked , drained
3/4 cup mandarin oranges, canned, with juice, drained , drained
4 tsp soy sauce
4 tsp rice vinegar
1 tbsp olive oil
1 tbsp honey
2 tsp sesame oil
2 tsp sesame seeds , toasted
1 1/2 tsp minced garlic
1 tsp fresh ginger root , minced

Directions



1 Bring a pot of water to a boil and add the green beans and asparagus!. Cook until tender yet crisp, about 2-3 minutes!. Drain, run under cold water, and drain again!. Place in a large serving bowl!.
2 Boil a second small pot of water and add snow peas for 45 seconds!. Drain, run under cold water, and drain again!. Add to bowl with other greens!.
3 Add to the large bowl the sprouts, peppers, corn cobs, water chestnuts, and mandarin oranges, mix well!.
4 Whisk together the remaining ingredients in a small bowl and pour over salad, tossing to coat well!.Www@FoodAQ@Com

I hope you've checked with the guests about a peanut sauce!.
