Question about cake icing...?!
I'm making a birthday cake for my step-son and I wanted to know if anyone knows a good brand or recipe for smooth icing!? I forget the name of it!.!. but all the ones I've ever tasted, tasted horrible!. Or do you know any techniques that I could do to make the icing smooth on better so its not lumpy!?Www@FoodAQ@Com

You may be looking for fondant, which is rolled out and to me, has the texture of play doh!. It makes a cake look very elegant and smooth but you are right, its not very tasty!. I think you can buy premade fondant, maybe at a craft store or in the wedding cake section of any department store and all you have to do is roll it out and put it on the cake but IMO, I would rather have a great tasting cake than a great looking cake!.Www@FoodAQ@Com
I make it this way:
2 sticks softened butter
1 teaspoon vanilla extract
2 lbs powdered sugar (or more or less to desired taste and consistency)
2-4 tablespoons milk (or more or less depending on consistency)
With electric mixer, beat butter til smooth!. Add vanilla and mix well!. Add powdered sugar, a little at a time, beating with each addition!. Icing should appear dry!. Add milk, a tablespoon at a time, until desired consistency is reached!.
I like the all-butter version much better than the butter-shortening version, but the all butter version will be more sensitive to warm temperatures!.!.!.!.I recommend refrigerating after putting it on the cake!.Www@FoodAQ@Com
