How to get the "typical" taste of noodles?!


Question: How to get the "typical" taste of noodles!?
I tried my hand at noodles today!.!. They were nice, but whenever I had them at restaurants, they all had a common flavor, typical of noodles!.
I'm a veggie, so the flavor can't be of anything else there!.
I fried onion, chillies, peas in a pan, then poured boiled noodles over that!. added salt, black pepper on it!.
I dint get that "common n typical taste"!.
Was it for not adding soya sauce!? or anything else!?Www@FoodAQ@Com

It sounds like you're making Lo Mein!. If you're looking for that "restaurant" flavor in Chinese food, it's MSG!. All large grocery stores will have it, usually sold in a salt shaker style container in the spice aisle under the brand name "accent!." You'll have to add a little soy sauce too!.

And don't worry, you're not allergic to it!. That is unless you're allergic to salt or sugar too, because that's all Mono-sodium glutamate is, one sodium (sans the chloride that would make table salt) and two glucose molecules!. I know it's trendy to say it gives you a headache, but it doesn't!.

All Chinese restaurants use it, even if they say they don't!. That's why it's that flavor that you just can't replicate!. Now you know the secret and you can do it at home!Www@FoodAQ@Com

The trick with Asian flavours is to get the balance of sweet, sour and salty right!.
next time try a splash of soy for the salt, small spoon of sugar (preferably palm sugar) but normal will do for the sweet and mushroom sauce would be good for you as you are vegetarian!. At the end squeeze in some lime juice!.Www@FoodAQ@Com

Girl, this question makes no sense because there isn't one typical taste of noodles!. In Chinese cooking, there are dozens of different types of noodles with different textures and flavours!.Www@FoodAQ@Com
