Just use the 2 breasts:

CREAMY CAJUN CHICKEN PASTA
3-4 Boneless, skinless chicken breasts cut into thin strips
4 tsp Cajun seasoning (Pampered Chef makes a good one)
4 Tbsp Butter
2-3 Scallions, thinly sliced
4 Tbsp Roasted red peppers (from a jar), chopped, drained
2 cups Heavy cream
? tsp Salt
? tsp Dried basil
? tsp Pepper
? tsp Garlic powder
? cup Parmesan cheese, grated
? lb Pasta, cooked (linguine, rotini, shells, etc)
1!. Place chicken and Cajun seasonings in bowl, toss to coat
2!. In large skillet over medium heat, sauté chicken with butter until chicken is tender, about 5-7 minutes
3!. Reduce heat; add scallions, heavy cream, roasted red peppers, basil, salt, garlic powder and pepper!. Heat through
4!. Pour over hot pasta and serve
Try this using shrimp too!. Sauté shrimp about half way cooked as it will cook more in the sauce!.
If sauce is too thin, mix 2 Tbsp corn starch with a little cold water and add to sauce!. Stirring constantly heat over medium until thickens!.Www@FoodAQ@Com

Cook 'em in a large skillet with a little oil about 4 minutes per side on medium heat!. Add half of a chopped onion, cook briefly and add about 1/2 cup of chicken broth!. Cook about 3 minutes then add about half a jar of spaghetti sauce!. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes!. Meanwhile, cook some pasta following directions on the box!. Drain the pasta and serve the chicken and sauce over the pasta!.Www@FoodAQ@Com

I would make grilled balsamic chicken over salad!.

Why don't you grill the chicken and when it's done add to the pan a little balsamic vinegar, cook it out a few minutes!. Then buy pre-bought salad and add mushrooms, tomatoes, cucumbers, cheese, whatever you like to it!. Then top with the grilled chicken (Slice it up) and use your favorite dressing!. I like balsamic vinegar and olive oil (healthy and yummy)!. I've made this twice within the past 2 weeks!. Yummy and filling!Www@FoodAQ@Com

how about dice the chicken brown and cook in olive oil and garlic cloves and pour over angel hair pasta and mix well make a chicken pasta with garlic sauce on top taste great or
or
chicken breast breaded or not make a salad with cherry tomatoes onion carrots italian dressing olives cheese etc
or
bread the chicken breast and fry in pan and heat tomato sauce and put the chicken brest in a roll or ontop of pasta and make chicken parmesanWww@FoodAQ@Com

what i do that my husband likes is if you have a spice rack!.

i put the pan on low
cover the chicken with rosemary,thyme, salt, pepper, garlic powder,and dried onion bits!. really any herbs you like!.
( if you don't know what you like smell them and if you like the smell most likely you will like the taste)
coat well to form a nice coating
let cook for about 1 hour on a low low setting i use 2-3 with lid on pan!.
also add butter so it does not stick to pan and more flavor flip chicken about every 10 mins or so !. when fully cooked let rest for a few mins then serve!.

chop them up into bite sized pieces!. heat them in a frying pan (no oil needed) until they're almost done (covered)!. chop up some veggies (onion, green and red peppers, etc, anything you would like to put them in) and when the chicken's nearly done, throw in the veggies and some seasoned salt to taste!. serve in a tortilla with salsa, sour cream and cheese!Www@FoodAQ@Com

Im making fajitas tonight!. Cut up your chicken and marinate it in some kind of dressing!.!.!.I used ceaser vinegrate!. After an hour or so fry it up and I like to put bbq sauce on the chicken!. Sautee peppers and onions add the chicken and serve on warm tortilla shells with lettuce
