I don't cook!. I'm sick of scrambled eggs (the only thing I can cook)!. I live twenty-five miles from the nearest fast-food!. Delivery is out of the question and I am not about to resort to Lean Cuisine!. Any helpful (and rediculously) easy meals I can make!?Www@FoodAQ@Com

There are lots of meals that you could make for yourself and not complicated at all!. You can go to some tutorial video websites that will get you off to a good start!. You'll make a few mistakes in the beginning, but if you try again, you'll be successful!. (I'll never forget the first time I baked a cake !! My husband hates to make anything with more than 4-5 ingredients!. Here's some main dishes he cooks (serve with a salad or some steamed frozen vegetables):
Quesadillas - cheese or cheese with veggies like red peppers
-Slice some cheddar cheese or monterrey jack - put on half a flour tortilla and cook - either in the microwave for less than 1 minute or pan cook in a frypan for improved flavor!.

Spaghetti or penne pasta or rigatoni with jar of spaghetti sauce
Cook the pasta; jazz up the canned sauce with some additional chopped vegetables (peppers or other seasonal veggies), some browned Italian sausage (chicken, turkey, or pork)!. Sprinkle on parmesan/romano (the green Kraft can will do if you don't buy a small tub of shredded parmesan)!.

Cheese or chicken enchilada
Corn or flour tortillas!. Roll up with some cooked chicken or browned ground beef and some monterrey jack cheese inside!. Cover with canned enchilada sauce and bake for about 30 minutes at 350!. Sprinkle with some grated cheese and let sit for another 5 minutes to melt!.

Rice and beans - buy the cans of black beans caribbean style or red beans!. Make rice acc to package directions!. Heat the beans in the microwave in a bowl!. Mix and eat!. If you can find plantain chips, and make a mango smoothie with yogurt and frozen mango chunks, you'll think you're in the islands!.Www@FoodAQ@Com

Nachos! Are really easy to make!. All you need is minced beef, a can of chilli beans, some tinned tomatoes, and herbs and chilli!. Corn chips, cheese, and sourcream!.
* you can always use a can of baked beans and add some chilli if you like!.
You can make a big batch of chilli with any combonation of these ingredients:
mince, beans, tinned tomatoes, tinned corn, corgettes, chilli!.!.!.etc!.
And then freeze it in batches so you can have it when ever you like!.

The first thing you need is some cookbooks!.

Go to a good bookstore and browse through the cookbook section and select a couple that appeal to you!. Rachael Ray has some good ones on the market, including one that has recipes and menus for every day of the year!. Another good choice would be The Joy of Cooking, it is almost as much a textbook on HOW to cook as it is a recipe book, every cook needs a copy!.

Next thing you need are some basic cooking equipment!. It doesn't have to be fancy or expensive, but you need a set of cookware that includes a couple of different size skillets, and some sauce pans ranging from 1-quart to 3-quarts and a 5-quart or larger Dutch Oven!. Some pyrex casserole dishes in the 1-3 quart range and at least one 9"x13"x2" baking pan, either pyrex or metal!.

You will also need some good knives!. There are plenty of high dollar knives that will set you back a grand or more, but a set of Chicago Cutlery Knives for under $100!.00 will serve just as well, and you can get by with a set of Faberware knives for under $50!.00!. Most important of all you need two sets of measuring cups (one for dry measure and one for liquid measure, the liquid measure cups will have a pour spout on them) and measuring spoons!. If you don't measure your ingredients, you will have great difficulty repeating the results!. (My Mom is a good cook but unless she's baking a cake, she measures nothing, so even though a good cook, her cooking is inconsistent>)

Select a recipe or two from your cookbooks, and read them closely!. If you get a copy of The Joy of Cooking, there is a section that can explain!. Assemble your measured ingredients, combine them as the recipe directs, and cook as directed!. Don't be upset if your first attempts don't turn out perfect, cooking is as much an art as a science!. If it doesn't turn out the way you want it, think about how you made the dish to see if you made any mistakes!. then try it again another time!.

Practice and in no time at all you will be amazing your girlfriend with a tasty romantic dinner you cooked yourself!.

Chicken in the Heather
“Doc” Hudson

Ingredients:
One whole chicken, minus giblets or two Cornish game hens,
or chicken pieces
3 fluid ounces (6 TBS) light cooking oil
4 fluid ounces (half cup) clear heather honey
Salt and pepper (freshly ground black pepper if you have it)
3 ounces (6 TBS) Grainy mustard
Half teaspoon curry powder
One clove chopped garlic

Method:
Place the chicken in an oven-proof casserole dish!. Mix all the other ingredients together and pour over the chicken!. Cover the dish and cook in a pre-heated oven at 375*F (190* C or Gas Mark 4 for folks on the metric system, and Britons) for an hour!. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered!. The chicken will brown as a result!. Serve with boiled or creamed/mashed potatoes and fresh vegetables, or on a bed of rice!.

To cook perfect rice every time, fill a large pot with water, at least three or four quarts!. Add salt and bring it to a boil!. Add uncooked rice (one cup for every two servings you want to make) bring back to a boil, stirring frequently!. Boil for 15 minutes, taste for doneness, drain in a wire mesh strainer!. Return to the cooking pot and add a couple of tablespoons of butter or margarine, stirring until it melts!.

(This has become one of my favorite chicken recipes!. I cooked it on TV, and we served it at a Board of Trustees Dinner to rave reviews!. Editor)


Catfish cakes

INGREDIENTS
1 pound catfish fillets
1 medium onion, chopped
1 teaspoon prepared yellow mustard
1 tablespoon creamy salad dressing (e!.g!. Miracle Whip)
[I use real Mayonnaise]
1/2 teaspoon Old Bay Seasoning TM, or to taste
2 1/2 cups coarsely crushed buttery round crackers
1 egg
1 cup vegetable oil (for frying)

DIRECTIONS
Place catfish in a saucepan with enough water to cover!. Bring to a boil, and cook until fish flakes easily with a fork!. Drain off water, and mash up the fish!. Stir in the onion, mustard, salad dressing, Old Bay?, cracker crumbs and egg!. Mix until evenly blended!.
Heat oil in a large heavy skillet over medium-high heat!. Form the fish mixture into patties, and fry in the hot oil!. Drain on paper towels, and serve hot!.

[NOTE: Use fewer Ritz Cracker crumbs or the taste of the Ritz Crackers will overpower the delicate taste of the fish!. If you wish, you can substitute plain bread crumbs for half the Ritz Crackers!.]


Cheesy Beef Casserole



INGREDIENTS:
1 pound ground round
2 (8-ounce) cans tomato sauce
1 cup Ricotta cheese
1 (8-ounce) package cream cheese
1/4 cup sour cream
1/3 cup green onions, chopped
2 tablespoons butter, melted
8 ounces egg noodles, cooked
TO PREPARE:

MOM’S PORK CHOPS
2 lbs Pork chops, mixed, thin cut with bones
1 can Campbell’s tomato soup
1 can Peas with liquid (do NOT substitute)
2 or more Onions cut into large pieces
Salt and Pepper
1!. Place pork chops in large baking dish
2!. Pour soup and peas with liquid over chops
3!. Add onions, salt and pepper
4!. Cover tightly and bake at 350 degrees for 1 hour 15 mins or until chops are well cooked and falling apart
5!. Serve with mashed potatoes



BISQUICK QUICHE
4 Eggs
1 cupMilk
? cupBisquick
1 cupCheese, shredded
1 cupCooked meat, poultry or seafood
1 cupCooked vegetables
1 medOnion, chopped and cooked in butter
Salt/Pepper
1!.In blender whirl eggs, milk, Bisquick, salt and pepper for 1 minute
2!.In a greased baking dish layer cheese, meat, onion and vegetables (cheese on bottom so it doesn’t all float to the top)
3!.Pour egg mixture over all (don’t worry if it doesn’t cover)
4!.Bake at 350 degrees for 50-60 minutes until knife inserted in center comes out clean
Suggestions:
Cooked shrimp, Munster cheese, pea pods
Bacon, Swiss cheese, broccoli
Chicken, Cheddar cheese, spinach
Taco meat, Jack cheese, green peppers
I’ve used leftover meatloaf cut in cubes, anything goes, use up the leftovers in the refrigerator


MEXICAN BEEF TART
2 cansRefrigerated biscuits (or your fav homemade)
1 lbHamburger, cooked and drained
1 smallOnion, chopped
1 mediumGreen pepper, chopped
16 ozSalsa, your choice of heat
2 cupsShredded cheese of your choice
Sour cream and scallions as garnish if desired
1!.Separate biscuits and cut each in half
2!.Place into greased 9x13 pan
3!.Mix hamburger, onion, green pepper and salsa
4!.Pour over biscuits
5!.Bake at 350 for 25 minutes
6!.Top with cheese, return to oven for 10 minutes
7!.Serve with sour cream and scallions as garnish


BAKED SPAGHETTI
8 ozSpaghetti, cooked and drained
2 cupsSpaghetti sauce
4 ozPepperoni, thinly sliced
4 oz canMushrooms slices and stems, undrained
1 TbspGrated onion (or ? cup sautéed onions and peppers)
? cupMozzarella cheese, shredded (or more to taste)
1!.In 2-3 quart casserole dish combine all except cheese
2!.Top with shredded cheese
3!.Bake at 350 degrees about 20 minutes or until bubbly

FRIED BONELESS CHICKEN
3 -4 lbWhole chicken, cut up
2 cupsFlour
2 cupsMilk
2Eggs
1 tspBaking powder
1 tspSugar
1 tspSalt
? tspPepper
2-3 cupsOil for frying
1!.Boil chicken, let cool, remove meat and break up into 1-2 inch pieces
2!.Mix remaining ingredients together, except oil
3!.Add chicken, mix well
4!.Using large spoon scoop mixture into oil forming 3-4 inch patties
5!.Cook 3 minutes each side or until lightly browned and batter is cooked through
6!.Drain on paper towels

I like 80 miles away from the nearest fast food, doctors/hospitals, and wal-mart!. But here are some good easy recipes!.

6 pork chops (approx 5oz each)
3 Potatoes
3 Carrots
1 onion
2 Cans cream of mushroom soup
1 1/2 Cans of Milk
3 Tbsp Flour
salt and pepper

Brown the chops in a skillet that has been lightly oiled!. As the chops are browning slice the carrots potatoes, onions, and carrots!. Place the browned chops in a 9x13 baking dish!.
Layer on the veggies!. In a separate bowl mix the soup and flour until smooth, then add the milk!. Pour over the chops and veggies and then cover and bake for 1 hour at 350!. Then remove lid and continue to bake for another 15min!.

Chili:

1 lb hamburger
1 onion chopped
2-3 cloves garlic
1 can stewed tomatoes
1 can kidney beans

To taste:

chili powder]
cumin
seasoned salt


Brown the bruger and drain!. Add the onion and garlic and cook until onions are translucent!. Add to a pan and add the other ingredients!. Taste and add more spices as you need to have your taste buds happy!.

Basic Stew:
1 pound stew meat
1 or 2 carrots peeled and cut into big chunks
1 or 2 ribs of celery cut into big chunks
1 onion chopped
1 large white potato or 2 medium potatoes peeled and chopped
1 clove garlic chopped
1 can stewed tomatoes
Oil
Flour
Seasonings such as seasoned salt, granulated garlic, pepper, celery salt, onion powder and a few bay leaves

In a large skillet heat the oil!.
In a zipper seal bag add flour and all the seasoning to taste-except bay leaves!. You want to season it kinda heavily because it will basically season your whole stew!.
Toss the meat into the bag of flour and coat well!. Add the meat to the oil, adding a little extra flour!.
Meanwhile add all veggies and bay leaf to a soup or crock pot!. Add the meat when it is done frying, add all the flour drippings as well!.
Simmer on low heat until the meat and veggies are tender!. Adding more water or seasonings as needed!. Stir from time to time as well!.

Crock Pot Chicken Salsa Curry

10 chicken thighs-bone in
1 jar of your fav salsa
1/2 onion chopped
1 tablespoon curry (or about 1/2 if you don't like a strong curry taste)
1/2 cup sour cream

Place the chicken in the crock pot!. Mix the onion, curry and salsa!. Pour over the chicken and cook on low for about 6-8 hours!.

When the chicken is done take it out of the crock pot and put on a serving plate!. Add the sour cream and mix well!. Spoon the sauce over the chicken!.

This would go well with rice or cous cous!.

If you don't have crock pot you could also do this is a roasting pan or a casserole dish with a cover or tin foil(about 200) check it though since it may cook faster!. I have only done this once in the ovena dn I think I cooked it for 3-4 hours!. This recipe is easy to do smaller portions of as well!.

Mexi-rice:

Use rice that is still warm!.

Heat a skillet or griddle pan to a med-low heat!. Add the rice and your favorite salsa, some olives, corn and ground cumin!. (A great salsa to use would be the kind in the plastic tubs in the produce section, I think it's labeled as "Fresh Salsa" but El Paso or whatever would work as well!.)

Instead of pre-made salsa make your own using roma tomatoes chopped small, red onions, chopped cilantro, minced garlic, finely chopped jalape?o pepper, adding some lime juice, and garlic salt!. Then toss this fresh salsa in with the rice and cumin, olives, and corn!.

Serve hot and I like mine with just a sprinkle of melted cheese!.!.!.!.!.yumm!!!

Creamy chicken enchiladas:

1 pound boneless chicken breasts diced
1 8oz package cream cheese cut into cubes
Flour or corn tortillas
1 can diced green chili peppers
ground cumin
1 or 2 can green enchilada sauce
Shredded cheese

Cook the chicken in a skillet and when the chicken is done add the cream cheese, it will melt!. As the cream cheese melts add the green chilis, and a couple of good dashes of cumin!. Continue to heat on low until the cream cheese has melted!.

Fill a tortilla with the chicken mix, roll and place in a baking dish, Continue until the chicken mix is gone!. Top with the enchilada sauce and sprinkle with cheese!. Bake at 350 for about 10-15 min or until the sauce is nice and hot and the cheese is golden and bubbly!.

Autmn Chop Skillet:
Cook 2 pork chop with the following: 1 red bell pepper cut into 1 inch pieces, 1/2 onion chopped into medium to small pieces, and 1 apple sliced!. Cook the chops in a tiny bit of oil, brown on one side and turn, add the onions, pepper, and apples!. Cook until chops are done and the other ingredients are crisp tender!. Serve with rice!.

Sweet Chop Bake
The next recipe is for as many chops as you want to make!. Salt and pepper both sides of the chops, place in a baking dish!. Top EACH chop with the following
1 tbsp brown sugar
1 tbsp ketchup
1 slice onion
1 slice lemon

You need to start by watching cooking shows!. Go for the everyday meal shows like Semi-homemade or 30 Minute Meals by Rachel Ray!. This will get you motivated, inspired, and learned in simple cooking terms!. Start with real simple stuff and little by little advance to the next step!. also when starting out, and since it is just you make things with little or no spice so that you can divide the big pot and season smaller portions and have a larger varaity!. For example if you are going to make spaghetti and meat sauce!. Cook the meat with the tomatoes but don't add the spices!. Divide it in half, add half the italian spices to one half of the meat save second half to make chilli, all you have to do is add chilli spice!. When looking for recipes be aware that most recipes serve 4 to 8 people!. Web pages like www!.allrecipes!.com let you select the number of people you are cooking for and it will adjust the recipe for you!. Other web pages like www!.eatingwell!.com have a bunch of recipes for 2 people!.
Finally, if you are having problems feeding your self and have family or close friends living close to you offer to pitch in with money, work, or food (cooked or uncooked) and have them cook for you!. They can always save you some and ypu can pick it up the next day before you go home!.
Here are some really easy recipes for bigginer cooks!.
TUNA NOODLE CASSEROLE?
1 can tuna (7 1/2 oz)
1 can cream of chicken soup
1 small can green peas
3 cups noodles, cooked
1/2 teaspoon salt
1/2 cup milk
Flake tuna in casserole dish!. Add soup to tuna!.
Add noodles, salt, and peas!. Stir all together!.
Bake 30 minutes at 350 degrees!.
APRICOT GLAZED PORK ROAST?
1/2 - 3/4 of jar of apricot preserves
1 envelope onion soup mix
1 small bottle of Russian dressing
meat of your choice (chicken or pork)
Preheat oven to 350°F!.
In medium saucepan combine ingredients and warm until preserves melt!. Place meat into baking dish and pour glaze over meat!.
Bake until chicken or pork is cooked through, basting frequently!.
Serve pan juices over meat and or mashed potatoes!.
ROAST CHICKEN IN LEMON - ROSEMARYMARINADE?
Out of many recipes for roast or grilled chicken, this remains my all-time favorite!. It's easy to prepare ahead of time, and the lemon juice gives the chicken a piquant, crispy taste that rivals that of any butter-basted bird!. 1 whole lemon, halved 4 sprigs fresh rosemary!.
FOR THE MARINADE:
2/3 c!. freshly squeezed lemon juice
2 tbsp!. olive oil
3 tbsp!. crushed black peppercorns or coarsely ground pepper
4 tbsp!. fresh, chopped rosemary or 2 tbsp!. dried
Combine all ingredients for the marinade!. Pour over the chicken and marinate in the refrigerator for at least 3 hours, or overnight!.Place the lemon halves and rosemary sprigs in the cavity of the chicken if a whole bird is used!. Roast chicken in a 425 degree oven for 15 minutes per pound!. Do not open oven or baste chicken during roasting!. If chicken is to be grilled, grill for approximately 20 minutes, turning once!. Legs and thighs should be grilled an additional 5 minutes or until meat is not pink!.Serves 4!.
EASY 1-2-3 VEGETABLE BEEF SOUP?
5 c!. water
1 1/2 lb!. beef stew, cut up
1 (16 oz!.) can stewed tomatoes
1 (10 oz!.) pkg!. frozen mixed vegetables
1/2 c!. chopped celery
1/4 c!. powdered onion soup mix
1 tsp!. seasoned salt
1-2 tsp!. Worcestershire sauce
1/8 tsp!. pepperDash Tabasco sauce
In 3 quart saucepan, combine water, beef and all dry ingredients and bring to a boil!. Add tomatoes, frozen vegetables and all other ingredients and cook on low with lid on pan!.Soup should do a slow boil for 1 hour and then switch to simmer for another half to 1 hour, depending on size of beef cubes!.Serves 4 hearty bowls or 6 medium bowls!. Leftover vegetables can be added including diced potatoes!.
When ever cooking meat chicken or pork make sure it is fully defrosted and close to room temperature!.
