Crispy Orange Beef --


INGREDIENTS
1 1/2 pounds beef top sirloin, thinly sliced
1/3 cup white sugar
1/3 cup rice wine vinegar
2 tablespoons frozen orange juice concentrate
1 teaspoon salt
1 tablespoon soy sauce
1 cup long grain rice
2 cups water
1/4 cup cornstarch
2 teaspoons orange zest
3 tablespoons grated fresh ginger
1 1/2 tablespoons minced garlic
8 broccoli florets, lightly steamed or blanched
2 cups oil for frying



DIRECTIONS
Lay beef strips out in a single layer on a baking sheet lined with paper towels!. Allow to dry in the refrigerator for 30 minutes!. In a small bowl, mix together the sugar, rice vinegar, orange juice concentrate, salt and soy sauce!. Set aside!.
Meanwhile, combine rice and water in a medium saucepan!. Bring to a boil, then reduce heat to medium-low and simmer for 20 minutes, or until rice is tender!. Add more water at the end if necessary!.
Heat oil in a wok over medium-high heat!. Toss dried beef in cornstarch to coat!. Fry in the hot oil in small batches until crispy and golden brown; set aside!. Drain all of the oil from the wok except about 1 tablespoon!.
Add orange zest, ginger and garlic to the remaining oil, and cook briefly until fragrant!. Add the soy sauce mixture to the wok, bring to a boil, and cook until thick and syrupy, about 5 minutes!. Add beef, and heat through, stirring to coat!. Serve immediately over steamed rice, and garnish with broccoli!.

Garlic Top Sirloin Pot Roast --



INGREDIENTS
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon paprika
1 (3 pound) top sirloin roast
6 cloves garlic, slivered
6 Yukon Gold potatoes, peeled and quartered
4 carrots, cut into 2 inch pieces
2 large sweet onions, peeled and chopped
1/2 cup water
1/2 cup beef broth
3 cubes beef bouillon
1 bay leaf
2 large green bell peppers, cut into 2 inch pieces



DIRECTIONS
Rub salt, pepper and paprika into the meat!. With a small knife, make slits in the roast!. Press the garlic slivers into the roast!.
Place the potatoes, carrots, and onions in a large slow cooker!. Place meat on top of the vegetables!. Pour in water and beef broth, and add bouillon cubes and bay leaf!.
Place lid on slow cooker, and cook for 6 hours on High, or 8 hours on Low!. During the last half hour of cooking, add the green peppers!.

Korean BBQ Beef (Pul-Kogi) --



INGREDIENTS
1 pound beef top sirloin, thinly sliced
6 cloves garlic, minced
1/2 pear - peeled, cored, and minced
2 green onions, thinly sliced
4 tablespoons soy sauce
2 tablespoons white sugar
1 tablespoon sesame oil
1 tablespoon rice wine
1 tablespoon sesame seeds
1 teaspoon minced fresh ginger
freshly ground black pepper to taste (optional)



DIRECTIONS
In a large resealable plastic bag, combine beef with garlic, pear, green onions, soy sauce, sugar, sesame oil, rice wine, sesame seeds, fresh ginger, and ground black pepper!. Seal, and refrigerate for 2 to 3 hours!.
Preheat grill pan over high heat!. Brush oil over grill pan, and add beef!. Cook, turning to brown evenly, for 3 to 6 minutes, or until done!.

Carne Asada Tacos --



INGREDIENTS
1 1/2 pounds boneless beef top sirloin, cut into thin bite-size slices
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
crushed red pepper to taste
1 lime
1 (28 ounce) can tomatillos
2 fresh jalapeno peppers, seeded
4 tablespoons canola oil, divided
1 (10!.5 ounce) can beef broth

12 (6 inch) corn tortillas
1/2 large onion, chopped
2 tomatoes, chopped
1 avocado - peeled, pitted and sliced
1 bunch fresh cilantro, chopped
1 lemon



DIRECTIONS
Place sliced meat into a shallow bowl, and season with salt, black pepper, and crushed red pepper!. Squeeze the lime juice over the meat, and turn until evenly coated!. Cover, and refrigerate for 30 minutes!.
In a blender or food processor, combine tomatillo and jalapeno!. Puree for 15 to 20 seconds, or until thick!. Heat 1 tablespoon oil in a large skillet over medium high heat!. Carefully pour in tomatillo mixture!. Cook, stirring frequently, for 5 minutes!. Stir in beef broth!. Reduce heat, and simmer for 20 to 30 minutes, or until mixture coats a spoon!. Transfer mixture to a serving dish!.
Heat tablespoon oil in a large skillet over high heat!. Stir in 1/3 of the beef, and saute for 1 minute!. Transfer to serving dish!. Repeat with remaining beef!. Meanwhile, heat tortillas in the oven or microwave, according to package instructions!.
To serve, place two tortillas on top of each other!. Add desired amount of meat, spoon over some tomatillo mixture!. Top with onions, tomatoes, avocado and cilantro!. Garnish with a wedge of lemon, to be squeezed over taco before eating!.Www@FoodAQ@Com

You can marinade it in a little olive oil and fresh pressed garlic!.

You can buy a good dry steak rub and rub the meat down and let sit in the fridge for a couple hours!.

You could marinate it in Teryaki Sauce and also Italian Dressing!.

For grilling, I always use smoking chips!. You can find Mesquite, Hickory, Maple, etc at Home Depot, Lowe's or Menard's (in the midwest)!. Just follow the instructions and you'll have a very flavorful steak!

Don't forget the baked potato, salad and the red wine - I suggest a Bogle Petite Sirah or Old Vine Zinfandel - or try a Rodney Strong Cabernet!.

I have this cookbook that has a great recipe for a beef in a red wine onion sauce!.!.!. the cookbook is called "Get in the Kitchen, BIT@HES!" and the dish is called "Bend Me Over! Beef" It can certainly be used for sirloin!.!.!. all you have to do is braise the beef in a the sauce!.!.!.!. make the sauce by using onion soup mix, water, red wine and, some jarred horseraddish, garlic, onion!.!.!.!. bring to a boil, then simmer!.!.!.!. first flour the meat, and then sear it!.!. I would chop it up and make a stew or soup!. That's easy!.
My stew is 2 pounds of meat,
2 pounds of carrots,
1 large onion chopped
1 large can or bottle of V8 Juice minus 1 cup for the cook,
2 cups of water ( you may have to add more make sure all is covered)
1 heaping teaspoon of each: Dried basil, oregano, paprika, garlic powder
and salt and pepper
and simmer for a few hours
Peel and cut 5 pounds of potatoes and add -
cook til potatoes are tender - add enough water to cover!.

The only thing to do with a good cut is to grill it!. Anything else would be criminal!.

If the cut isn't so good then you can grind it and make hamburger or you can stir fry it!. Maybe even cut it up and make a stew!.
