I make homemade salsa and I am having a problem with bitterness in my recipe?!


Question: I make homemade salsa and I am having a problem with bitterness in my recipe!?
I serve a homemade salsa at my restaurant and I am having a problem with a bitterness in my salsa!. The main ingredients are canned tomatoes, cumin, black pepper, garlic, lime juice, ro-tel tomotoes, kosher salt and parsley!.

What can i add to reduce the bitterness or acidity, while maintaining a fresh taste!?Www@FoodAQ@Com

You have no sugar in there, to counteract the acidity in the tomatoes!. But, I'm not sure how you're ever going to get a "fresh taste" when you're using CANNED veggies! !.!.!. and where's the cilantro!? Try this

FRESH SALSA

1 bunch washed cilantro
2 bell peppers, seeded
3-4 tomatoes
1-4 hot peppers, seeded (jalapeno, serrano, Anaheim, poblano)
1 TB minced or crushed garlic
1 white onion
1 TB white vinegar
1 TB olive oil
salt & pepper to taste

Pulse cilantro until finely chopped in food processor!. Coarsely chop other veggies in food processor!. Combine all ingredients and chill!.!.!.

The hotness of the salsa depends on how many, and what type, of hot peppers you use!. If you want a green salsa, you can substitute 5-6 tomatillos for the tomatoesWww@FoodAQ@Com

go fresh first of all: I wouldn't use canned tomato's they tend to have a processed taste!. Instead roast the tomato's, chilis, onion, and garlic, add sea salt and a small amount of lemon juice!. Cilantro is the key ingredient to really fresh salsa and the type of chili's you roast!.!.!. I use a blend of pablanos, jalepenos, and serranos!. All are very hot so to tone it down I use a small amount of dried chili powder like CA chili powder that is mild!.!.!.It adds a huge amount of flavor!.!.!.The best flavor comes from charring all of the ingredients and blending them together!. The come out so fresh!. If you sauce is bitter try adding a small amount of sweetness to tone it all down!.Www@FoodAQ@Com

Garlic can be bitter if it has a green center, it's old, or if it's pressed!. If you don't already, try mincing the garlic!. The cumin might also be what's bitter!. It could also be the quality of any of the ingredients!. You might want to try the recipe quite a few times, replacing the brands of ingredients each time!. You could also try adding a bit of chili powder and a bit of sugar!.Www@FoodAQ@Com

You should probably try using some Cilantro and add some sugar to taste!. Be careful when it comes to adding pepper with lime juice!.Www@FoodAQ@Com

You should add a little sugar n cliantro, I don't know how much you made but usually a Tablespoon of sugar to a gallon would be about right!. Anything with tomatoes require sugar and if you cook a pot of beans always add a spoon of sugar!. And to much cumin will leave a bitter taste also!. Black beans and corn are really good in salsa to!.

3 Cherokee Purples
3 Yellow Beefsteaks
2 Black Brandywines
7-8 Red Brandywines
(If you don't have access to these, use whatever fresh tomatoes you have!.)
Other Ingredients:
5 Jalapenos
2 Red pimentos
5 Cloves of garlic
1 Vidalia onion
1 Green pepper
3 Ears of corn!. (I used a hybrid of silver queen and yellow!.)
3/4 cup of Sherry Vinegar
3 cups of Black Beans
The juice of two limes
Sea salt and pepper to taste!.
Substitutions depending on taste are more than acceptable!.
Basically chop everything into bite-sized chunks, excluding the black beans, and combine all in a big bowl!. This makes a lot of salsa but it goes quickly!. I cook my own black beans, but a canned variety is acceptable if you rinse the beansWww@FoodAQ@Com
