Squirrel has a better flavor!. I make squirrel and dumplings and just smother the rabbit in onion gravy!. Either one need to be browned in flour firts then cooked very low for a long time like an hour or 1 1/2 hour!.

For dumplings just simmer the squirrel till tender drop in raw dumplings simmer on low till dumplings are done!.(some people just use canned biscuits pinched into little pieces)
For smothered rabbit, dredge in seasoned flour, brown on low on all sides!. Chop an onion in the bottom of a dutch oven, lay the browned rabbit on top of the onions!. Pour a can of undilted cream of mushroom soup over, Seal the pan in foil and bake at 350 for 1 1/2 hour!. Serve on riceWww@FoodAQ@Com

If the squirrel is young, it doesn't have to be cooked for a long time!. You can estimate the animal's age by examining the ears, teeth and gums, paws, etc!. You just have to know what to look for, do a search on google!. If it is young, it is good fried, if aged, stew it!. Fry fairly quick, same as a young fryer!. To stew, just check it now and then, you'll know when it's done; the meat will be falling off the bones!.Www@FoodAQ@Com
Cook it just like chicken!. I've eaten both rabbit and squirrel!. Both are very good!.Www@FoodAQ@Com
