Healthy Quick Dinners?!


Question: Healthy Quick Dinners!?
I'm sick of eating processed foods!. My goal is to be eating healthy foods, cooked from scratch, by the end of the year!.

My job is very physically demanding, and by the end of the day, I'm so tired!. Can you help me with some recipes that quick by tasty!.

Wow, I feel exactly the same way!. If I see another meal that has to be nuked in the microwave I will throw up!. I think the best thing to make that is rather healthy (I found the recipe a while ago in a magazine) is a grilled chicken breast and vegetable dinner!. I just grill a chicken breast in a skillet with a small bit of oil and season it with a little salt and pepper!. About 6-7 minutes per side is fine, or when it turns a nice toasty golden brown!. Then get some quick frozen vegetables and just cook them real fast and you have your protein and vegetables!Www@FoodAQ@Com

I have to same problem!. I am a college student and work part time, but am needing a change from fast food!. I like to have frozen vegetables, and then just make a meat, like fish is fast and easy , like salmon!.

also something that is easy is take a chicken breast and season it, and put salsa and grated cheese on top, cover with foil and bake!. It is quick, healthy, and easy!.Www@FoodAQ@Com

Your best bet is to make foods that can be frozen, so you make 1 freeze one for another day!. also, you should invest in a slow-cooker!. You put everything in it in the morning and come home to a great dinner!

EASY ENCHILADAS

Easy to make, lots of leftovers!. You can freeze these too!.

1 c!. canned or frozen corn, drained
2 c!. tomato sauce
1/4 tsp!. red pepper (chili pepper) flakes
8 corn or flour tortillas
1 c!. grated cheddar cheese
1 onion, chopped
1 c!. mushrooms, sliced (optional)
2 tsp!. olive oil
2 cloves garlic, crushed
19 oz!. (540 ml) can kidney beans

1!. Preheat oven to 350°F!. Sauté onion and mushrooms in oil for 5 minutes!. Add garlic and cook 2 minutes longer!. Rinse and drain beans thoroughly!. Place beans in a bowl and mash slightly!. Add to skillet along with corn!. Add ? cup of sauce and red pepper flakes; mix well!.
2!. Spray an oblong Pyrex casserole with non-stick spray!. Soften tortillas by heating in the microwave on HIGH about 1 minute!. Spread ? cup sauce in bottom of casserole!. Spoon some of bean/corn mixture on each tortilla in a strip across the middle!. Roll up tightly and arrange seam side down in casserole!. Top with remaining sauce!. Cover and bake for 25 minutes!. Uncover, sprinkle with cheese and bake uncovered 5 to 10 minutes longer, until cheese is melted!.
Yield: 8 enchiladas!. These reheat &/or freeze well!.Www@FoodAQ@Com

We just had Roasted Salmon!. Wash and dry salmon, roast whole in oven 45 min at 400!. Serve w/ mayo and veggie and rice!.

Pork loin roast, same as above!.

Salsa Fresca, roast 1 can stewed tomatoes, a handful if sliced kalamata olives, 1/4 c olive oil, 1 clove garlic diced and a 1/4 c onions for 1/2 to 1 hour!. Toss with cooked Fettucine about a quarter size for 2 people!.Www@FoodAQ@Com

Burritos!. You can just use roast beef or chicken with beans and salad and there you go!! Oh yeah don't forget to sprinkle some cheese over the top of it!.!.!. yummy! They are so easy and quick to make!.!.!. The supermarket even has kits with the wraps and sauce :)
