It is perfectly acceptable to cook and eat the albumen, it merely helps in suspending the yolk!. It also means you have a very fresh egg as it gradually disappears!. You will suffer no ill effects from ingesting this portion of the egg!.

I have been cooking/baking for thirty years and have NEVER removed the albumen from a single egg!Www@FoodAQ@Com

Too messy and does not affect anything, even if you separate the whites (clear) part from the yolk, it is just too much trouble to spend the time as it is just part of the egg!.Www@FoodAQ@Com

It's ok to remove it if you'd like!. I don't remove it for cakes, but I do remove it for things like french toast where it could make a little clump of egg instead of mixing into the bread!.Www@FoodAQ@Com

No, not at all!.
Just leave it there and mix it in!.
It is only used to keep the yolk in the center of the white when inside the shell!.
It doesn't cause us any harm!.Www@FoodAQ@Com
