TRD,
When the wind blows towards you, it's a no brainer!. The smoke is going to go right at you!. The opposite is the weird one!.

When the wind is at your back, the area right in front of you is shielded from the wind by your body!. The wind travels around you, but the majority of it doesn't follow the exact contour around your body!. It's more like a river flowing around a rock!. There's an area of turbulence just in front of you caused by the flow around you!. This air isn't moving nearly as fast as the air just to either side!. That means it's under less pressure!. This is the same principle that allows aircraft to fly and is a fundamental concept in aerodynamics!. Due to the turbulence, some of the smoke from the grill will find the area of lower pressure, and flow into it!. It basically 'likes' it there!. Wind rarely gusts in a perfectly straight line at the same speed all the time, so even if you move around a bit, this same thing is going to happen somewhat!.

The best way to avoid getting grill smoke in your face is to stand to the side of the grill where the wind will be hitting you AND the grill at the same time!. In other words, don't be lined up with the wind either in front of, or behind it!. It still won't be perfect, but it helps a little!.

Good grilling,
Kevin
