Do you use a blender to mix pancake mix?!

Question: Do you use a blender to mix pancake mix!?
Answers:
Never, that type of ridig/explosive, rough agitation activates too much gluten naturally present in the flour and results in tough and inconsistent pancake texture!.

With pancakes, quick breads and the like, you only need mix till BARELY incorporated, even some "unmixed" batter is ideal!.!.!.!.!.

That way, when the liquid ingredients hit the dry ingredients, and all come together on the hot surface of the pancake griddle (skillet, whatever) will insure light, delicate pancakes!. I also sub out the milk for yogurt or sour cream, and melted butter for the shortening called for in the ingredient list!.!.!.!.!.!.!.Enjoy, and hope this helps!.!.!.!.!.
