I am hunting for an oyster and pasta dish. Do you have a recipe?!

Drago’s Oyster Pasta
1 gallon oysters (approximately 120-130 oysters)
1 1/2 cups of whole garlic, peeled
1 1/2 cups of parsley, cleaned and trimmed
2 1/2 cups of olive oil blend (75% canola and 25% Italian olive oil)
1 64-ounce jar your favorite Alfredo sauce
2 pounds angel hair pasta, cooked
Salt, to taste
Parboil the oysters in a large stockpot in their own water until they start to curl on the ends!. You do not want to overcook the oysters!. Drain and discard oyster water!. Then move on to making a Bordelaise sauce by blending garlic in processor for 20 to 25 seconds until finely chopped!. Then blend parsley in processor for 20 to 25 seconds until finely chopped!. Combine garlic and olive oil together in a microwave-safe bowl and microwave on high for 3 minutes!. Add parsley to bowl with garlic and olive oil!. Mix all 3 ingredients well; this completes the Bordelaise!. Warm the Alfredo sauce and add the Bordelaise sauce and oysters!. Serve over cooked pasta!.

If there is one thing good in Southeast Louisiana this time of year, it's our oysters! You can bake, broil, saute, stew or eat them right off the halfshell! Here is a little something that I like to whip up --
Oyster Ya-Ya
2 dozen oysters and their liquid
fresh cracked pepper and kosher salt (but taste the juice of the oysters first to make sure they aren't already salted enough!)
1/2 pint of heavy cream
a dash of liquid crab boil seasoning
1 medium onion finely chopped
1/2 cup chopped green bell pepper
2 cloves of fresh garlic finely chopped
2 stems of celery finely chopped
2 tablespoons of olive oil
angel hair pasta boiled
Fry your chopped seasonings in the olive oil until wilted!. Be sure NOT to burn the garlic or you might as well start over! Slowly add your whipping cream, crab boil seasoning and cook over medium heat until it begins to thicken!. Strain the juices from the oysters to ensure you don't get any shells and then slowly add the liquid until your sauce has a nice consistency but not too watery!. Oysters will release their own liquids so keep this in mind when adding the juice!. Lastly, add your oysters to the hot mixture and cook for an additional 10 minutes -- your sauce should be creamy but not too thick!. Lightly salt and pepper the dish to taste, toss with cooked angel hair pasta -- serve with a nice light salad and there you have it, OYSTER YA-YA!Www@FoodAQ@Com

Pasta with chicken
1 pkg!. of fresh linguine noodles
1lb!. chicken
Sun-dried tomatoes- chopped
Capers (drained)
Fresh Basil/or dried
Mushrooms-chopped
Fresh Parmesan cheese
Balsamic Vinegar
Garlic & Herb seasonings
Butter
Extra Virgin Olive Oil
Sea salt & black pepper to taste
1!. Pre-heat oven to 350!.
2!. Let the chicken brown on both sides in a cast iron pan with olive oil, Tablespoon of butter, and Garlic & Herb Seasoning!.
3!. Add balsamic vinegar, and place in oven for about 20-30 minutes!.
4!. While baking, chop mushrooms, basil, and sun dried tomatoes, and shred cheese!.
5!. Sauté mushrooms in butter and salt and pepper!.
6!. Set aside!.
7!. When chicken is done, cut into pieces and boil noodles!.
8!. Drain water when the noodles are done!. ( Leave the noodles in the pot)
9!. Add olive oil, salt and pepper!. Mix well!.
10!. Then add the mushrooms, basil, chicken, sun dried tomatoes, and capers to the noodles!.
11!. Combine well!.

I will tell you the most simple one I know!.
If you don't want to use the bacon use olive oil!.
Fry some thin sliced bacon until crisp!. Works well with Panchetta or American bacon!. Depends on if you like the smoky flavor!.
Remove the bacon and save!.
Saute thin sliced onion and sweet peppers ( bell peppers or others ) until just soft!. Add oysters and chopped or sliced olives!. Saute until the oysters are just firm add the bacon back in!. Serve over pasta!.
Had this at an Italian restaurant!. They also had pine nuts in it but I prefer without!. Works with clams or scallops too!.Www@FoodAQ@Com
