I've tried this simple recipe a few times witih great results:

Chewy Oat Cookies

75g plain flour, sifted
50g butter
75g sugar
1 tablespoon golden syrup (or honey)
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water
50g rolled oats
30g desiccated coconut

1) Melt the butter, golden syrup and sugar in a saucepan over low heat!. Remove from the heat!.

2) Mix the bicarbonate of soda with the boiling water!. Add this to the melted mixture!.

3) Put the dry ingredients in a mixing bowl and make a well!.

4) Pour the melted mixture into the well and mix to a moist but firm consistency!.

5) Place spoonfuls of the mixture onto a greased baking sheet!. Leave enough room between each spoonful for the mixture to expand during baking!.

6) Bake at 170degCelcius (338deg Fahrenheit) for 10-15 minutes or until golden brown!.

7) Allow the cookies to cool on the baking sheet before removing them!.Www@FoodAQ@Com
