Poppy Seed Cranberry Muffins/Bread
INGREDIENTS
* 2 1/2 cups all-purpose flour
* 3/4 cup sugar
* 2 tablespoons poppy seeds
* 3 teaspoons baking powder
* 1/2 teaspoon salt
* 1 egg
* 1 cup milk
* 1/3 cup butter, melted
* 2 teaspoons vanilla extract
* 2 teaspoons grated lemon peel
* 1 cup fresh or frozen cranberries, thawed and chopped
* ICING:
* 1/2 cup confectioners' sugar
* 2 teaspoons milk
DIRECTIONS
1!. In a large bowl, combine the flour, sugar, poppy seeds, baking powder and salt!. In a small bowl, beat the egg, milk, butter, vanilla and lemon peel!. Stir into dry ingredients just until moistened!. Fold in cranberries!.
2!. Pour into a greased 8-in!. x 4-in!. x 2-in!. loaf pan!. Bake at 350 degrees F for 55-60 minutes or until a toothpick inserted near the center comes out clean!. * 1/4 cup milk
* 2 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/2 teaspoon kosher salt
* 2 half-pints fresh blueberries, picked through for stems

Preheat the oven to 350 degrees F!. Place 16 paper liners in muffin pans!.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 5 minutes!. With the mixer on low speed, add the eggs 1 at a time, then add the vanilla, sour cream, and milk!. In a separate bowl, sift together the flour, baking powder, baking soda, and salt!. With the mixer on low speed add the flour mixture to the batter and beat until just mixed!. Fold in the blueberries with a spatula and be sure the batter is completely mixed!.
Scoop the batter into the prepared muffin pans, filling each cup just over the top, and bake for 25 to 30 minutes, until the muffins are lightly browned on top and a cake tester comes out clean!.

2 (8 ounce) packages cream cheese
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling
Makes 48!.
Preheat oven to 350 degrees F (175 degrees C)!. Line miniature muffin tins (tassie pans) with miniature paper liners!.
Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup!.
In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy!. Fill each miniature muffin liner with this mixture, almost to the top!.
Bake for 15 minutes!. Cool!. Top with a teaspoonful of cherry pie filling!.

Pour the batter into paper lined muffin pan cups!.
Variations: Blueberry Muffins: Add 1 cup fresh blueberries!. Raisin Muffins: Add 1 cup finely chopped raisins!. Date Muffins: Add 1 cup finely chopped dates!. Cheese Muffins: Fold in 1 cup grated sharp yellow cheese!. Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits!.

* 1 pkg of your favorite shredded cheese
* 1 stick of pepperoni or your favorite topping of choice

In the bowl of an electric mixer, combine butter and sugar; beat until thoroughly blended!. Add the rest of the ingredients except walnuts to the electric mixer bowl and beat at low until dry ingredients are moistened!. Turn to high and beat until smooth!. Blend in walnuts by hand!.
Spoon batter into muffin cups until 2/3 full!. Bake at 350 degrees for 15-17 minutes or until a toothpick inserted in the center comes out clean and dry!. Remove from oven and allow to cool in pan for 10 minutes before turning out!.Www@FoodAQ@Com
