Question: Adding Veggies to Spaghetti and Meatballs!?
I going to make spaghetti and meatballs and want to add veggies to make it more nurtrious!.

Any suggestions on what goes well with a jarred tomato and basil marinera sauce!?

well!.!.!. since veggies will be the only thing (if they are fresh) that will have any minerals, vitamins and soluable proteins!.!.!.

red peppers, green peppers, mushrooms, onions and a mince of garlic!.!. and don't forget the fresh parsley!

that's one way i've been dishing out the pastas in my household for many eons!.


also, many times i love to serve spaghetti ontop of a pile of homemade mashed potatoes!.!. craddled that is!.

take fresh potatoes, chop (leave skins on, they're rich in minerals and fiber) add one avocado, some black pepper!.!.!. boil til soft!.!. then mash add milk (of your choice, cows or soy!.!.) and mash, blend til the consistancy of your preference!.!.!. then

dish out!.!.!. tunnel the middle of the potatoes in a pile on your plate!.!.!. then fill with spaghetti and serve!.!.

don't forget the french bread or whatever bread you desire!.!.

Heres what I do, I get 2 large carrots, 2 stalks of celery, 1 small zuchinni, 1 bell pepper, medium red onion,and mushrooms and I chop them up in my food processor til fine but still chunky enough to give the sauce some texture!. I saute them in a couple tablespoons of a very good quality olive oil, add 2 cloves of crushed garlic and when soft but not completely mush I add them to the sauce!. I do this for my meatloaf and meatball recipes too!. Add the extra veg in and the kids dont have a clue!. For the type of sauce you have I would think that all would work depending on the amounts used!. Go stronger on the carrot, celery, onion and bell pepper as when they cook they give more flavor for a richer sauce!. also add in some Tomato paste that can bump up the flavor too!.Www@FoodAQ@Com

I always add onions, green or red peppers, mushrooms!.
Sometimes I also add zucchini, and or eggplant!. In addition to the veggies listed above!. I have also added a grated carrot if the sauce seems to acidic!.
My daughter adds red kidney beans!. Her mother in law always added them so she started, can't even tell they are there unless you look for them!. They add no taste but will stretch the pot of sauce as well as add fiber and more protein!.Www@FoodAQ@Com

I like to put zucchini, onions, mushrooms, olives and green pepper in my red sauce!. I think any veggie you like would go with it!. I once, while doing the Atkins diet, just steamed up a whole bunch of veggies and served my red sauce over them with parmesan cheese!. It was tasty!.Www@FoodAQ@Com

Don't do that!. Just serve it on the side!. Make your veggy plate and only put a small bit of pasta and sauce on it That will make it more healthy!.

I'm just saying that I wouldn't add broccoli and stuff!. Green pepper, onion, mushroom is fine!. Tomorrow (as you will have left overs) slice zucchini or eggplant and saute' that in the sauce!.Www@FoodAQ@Com

Saute some mushrooms, onions and green peppers in olive oil with a bit of garlic then add them to your sauce!. I do this all the time with jarred sauces!.Www@FoodAQ@Com
