Answers:
2 cups Cheerios cereal
3/4 cup all purpose flour
1/2 cup whole wheat flour
1/3 cup packed brown sugar
1 tsp baking powder
3/4 tsp baking soda
1 cup mashed ripe banana (2-3 medium)
2/3 cup buttermilk
2 Tbsp canola oil
2 egg whites
1/2 cup walnuts
Heat oven to 400 degrees
spray regular-size muffin cups with cooking spray or use cupcake papers
Place cereal in food-storage plastic bag; slightly crush with rolling pin to make 1 1/2 cups
In large bowl, mix cereal, flours, brown sugar, baking powder and baking soda!. Stir in remaining ingredients just until moistened!. Divide batter evenly among muffin cups!.
Bake 18 - 22 minutes or until golden brown!. Let stand about 2 minutes in pan, then remove from pan to cooling rack!. Serve warm if desired!.Www@FoodAQ@Com

In large bowl, stir together flour, baking powder, soda, and salt!.
In a medium bowl, beat egg whites slightly!. Stir in bananas, sugar, oil, and lemon peel!. Add to flour mixture, stirring just until combined!. Stir in walnuts!. Fill muffin pan cups 2/3 full!.
Bake for about 20 to 25 minutes, or until tops are lightly browned!. Remove muffins from pan!.

1 tablespoon allspice or pumpkin pie spice
1/4 teaspoon baking soda
4 each liquid egg substitute four eggs worth
1 1/2 cup bananas mashed
1/2 cup coffee creamer, powdered fat-free, macadamia nut flavored
1 package liquid butter flavoring eg!. Butter Buds?
1 tablespoon vanilla extract
1/2 cup walnuts chopped

Preheat oven to 400 degrees!. Lightly coat a muffin pan with nostick spray!. In a large bowl combine flour, brown sugar, baking powder, allspice and baking soda, set aside!.
In another large bowl, beat egg beaters until foamy!. Add bananas, dry envelope of liquid butter buds (don't reconstitute, just throw in dry), coffee creamer and vanilla!. Stir into dry ingredients until just blended!. Fold in nuts!.
