Well I do put celery in mine along with onions, potatoes and carrots!. You can also put in turnips, parsnips, sweet potatoes!.!.!.any kind of root vegetables will work in pot roasts!.Www@FoodAQ@Com

Root vegetables like, beet root, sweet potatoes, and turnips go very well with pot roast!. I also like to serve green leafy veggies like spinach, beet greens, collared greens with pot roast!.
I like to make a roasted veggie mix, and the greens!. But you can serve just one!. Here are my recipes:
***Roasted veggies***
Serves 4 people
?1 large sweet potato,
?1 or 2 potatoes,
?2 carrots,
?1 small bag pearl onions (if frozen, thaw)
?4 small beets (red, yellow, or 2 and 2)
?1-1/2 cups broccoli florets
?1-1/2 cups cauliflower florets
?1 or 2 turnips (optional)
?1/2 cup olive oil
?4 crushed garlic cloves
?Salt and freshly ground pepper
?1/2 teaspoon red pepper flakes
?2 teaspoons each fresh mint, oregano, and sage!. If using dry spices use 1 teaspoon crushed!.
1!. Pre-heat oven to 350F
2!. Cube all the vegetables, except broccoli and cauliflower into bite size pieces
3!. In a large bowl mix olive oil, salt, pepper, pepper flakes, and spices!. Add cubed veggies and toss to cover!.
4!. Place veggies on a brimmed baking sheet!. Bake in pre-heated oven for 25 to 30 minutes or until veggies are tender, tossing every 5 or 10 minutes!.

***Leafy Greens with Garlic***
Serves 4 to 6 people
?About 8 cups baby spinach, beet greens, or collared greens
?6 large garlic cloves, finely chopped
?1 tablespoon each butter and olive oil or 2 tablespoons butter or 2 tablespoons olive oil
?OPTIONAL: 2 tablespoons sour cream, OR 4 slices bacon, cooked and crumbled!.
1!.Put a large pot of salt water on to boil!. Wash and trim greens (you can do just one or a mix)!. Put greens into boiling water!. When water begins to boil again take spinach out and place in a bowl with cold water!.
2!. Finely chop greens!.
3!. Heat oil and butter in a large pan over medium heat!. Add the garlic and sautee until fragrant, and starting to brown!. Add chopped greens and incorporate with the garlic!. Season with salt and pepper and heat through!. If adding cream or bacon add now!. Serve warm!.Www@FoodAQ@Com

the small white onions go well!.
but i guess other than that what about fresh peas!?
my thinking is that other veggies will go bland,loose flavour and texture while in the pot for a long time! so maybe if you add at the end mushrooms and red bell pepper could go well!.Www@FoodAQ@Com

Tossed salad best of all!.

We like the top brand of canned veggies because they are seasoned so well, but you can use all types of frozen veggies too!.

We like green beans, or peas, or spinach!.

Canned sweet sliced beets will make the dish look pretty and will taste good too!.Www@FoodAQ@Com

Im not really sure what else but I usually put onion celery carrots and potatos!. but you can put other things in there like bell pepper and other veggies that you may like anything would go with pork so make variety of veggies that you like!.Www@FoodAQ@Com

Onions!. And after you sear the meat, sprinkle a little allspice on it!. Cook it in marsala instead of water!. Some folks add whole tomatoes, but that's an individual preference - I don't add 'em to mine!. I always use chuck roast, too!.!.!.Www@FoodAQ@Com

my mom is an excellent cook and she uses onions a lot (along with potatoes and carrots) i think i have even seen her use wine before!? maybe that would help!.!.!.but i dont want to ruin your pot roast so use with caution! good luckWww@FoodAQ@Com

I find the root vegetables are the best for pot roast so besides potatoes and carrots, maybe turnip (rutabaga) or parsnips!. Onions go well too!.Www@FoodAQ@Com

Braise with onions & beef broth for a couple of hours after browning before you add carrots & potatoes!. You can always add peas at the very end as well if you like!.Www@FoodAQ@Com

Cabbage, Onions, but the cabbage you don't put in until the last hour or so depending on the texture you are wanting!.Www@FoodAQ@Com
