I want to make a bread pudding?!


Question: I want to make a bread pudding!?
every time i google the recipe for bread pudding all the bread pudding recipes that come up are what i know to be as bread and BUTTER puddings!. What I am after is the pudding that ya nan used to bake that's as heavy as a brick or what is in the bakers window!. Can anyone helpWww@FoodAQ@Com

Soak 4 - 6 oz of Bread in water for few mins!.
Mix together:
Bread squeezed out
3oz margarine
3oz Brown sugar
1 or 2 eggs
4oz mixed dried fruit
Half tablespoon syrup

Por into greased dish
Bake 180 for approx 1 hourWww@FoodAQ@Com

Basic Bread Pudding
from Mark Bittman's How to Cook Everything


3 cups milk
4 tablespoons unsalted butter, plus more for greasing the pan
1 1/2 teaspoons cinnamon
1/2 cup sugar + 1 tablespoon
pinch salt
8 slices white bread, crusts removed if very thick
3 eggs

Preheat oven: 350F!.

Warm milk, butter, cinnamon, 1/2 cup sugar and salt until the butter melts!.

Butter/grease an 8-inch square baking dish!. Cut/tear the bread in bite-sizes pieces and add to baking dish!. Pour milk mixture over the bread!. Let sit for a few minutes!.

Beat eggs and pour into the bread mixture, swirling to get the egg incorporated all throughout!.

Mix remaining sugar and cinnamon and sprinkle over top!. Place baking dish in a bain marie!.

Bake for 45 minutes to 1 hr, until a knife through the center comes out clean!. The center will be slightly wobbly!. If you wish to brown the top, place dish under the broiler for a few seconds!.!.

Now here's some variations on that:




Bailey’s Sauce

* 4 egg yolks
* 2 cups whipping cream
* 1/4 cup icing sugar
* 6 tablespoons Bailey’s
* 2 teaspoon cornstarch mixed with 1 tablespoon water

1!. In a saucepan heat the whipping cream till scalding ( do not bring to a boil ) and be sure to continually stir so mot to burn the bottom!. Remove from heat!.
2!. In a small bowl whisk the yolks, bailey’s and sugar together!. Add a little of the scalded milk to the bowl to bring up the temperature of the egg yolks!.
3!. Now, add the yolk mixture to the whipping cream and whisk so the yolks won’t scramble!.
4!. Place the saucepan back onto the heat and continue to simmer for a few minutes; continue to stir!.
5!. Add in the cornstarch mixture and cook for a few more minutes till the sauce thickens!.
6!. Remove from heat and serve hot with the bread pudding






Caramel Pecan Sauce
1 cup sugar
1/4 cup water
1/2 cup heavy cream
1 tbsp unsalted butter
1/2 cup chopped pecans, lightly toasted

1!. Stir the sugar and water together in a small saucepan placed over low heat and cook, stirring constantly, until the sugar dissolves!. Increase the heat to medium-high and bring the liquid to a boil without stirring!. If sugar crystals appear on the sides of the pan, brush the sides down with a wet pastry brush!. Boil the syrup for 4-5 minutes until it turns amber in color!. Swirl the pan if it starts to color only in one area!.

2!. Remove the pan from the heat and add the cream by pouring it down the side of the pan, stirring constantly!. If the caramel hardens when you pour in the cream, put the saucepan back on low heat to soften!. Add the butter and stir until all is incorporated!. Stir in the pecans!. Bread Pudding with Whiskey Sauce
1 loaf French bread
1 quart milk
3 eggs
2 cups sugar
2 tablespoons vanilla
3 tablespoons butter, melted
1 cup raisins
1 cup sugar
1 egg
? cup butter, melted
? cup whiskey
Preheat oven to 350 degrees!. Prepare 9 x 13" pan with non stick spray!.

Break bread into pieces, place into large mixing bowl!. Pour milk over bread, crush with hands until well blended!. Stir in 3 eggs, sugars, vanilla, 3 T!. melted butter and raisins, mixing well!. Pour into prepared pan and bake for 45 - 60 minutes, or until very firm!.

Make sauce: In a medium bolw, cream sugars with 1 egg!. Gradually stir in melted butter, then whiskey!. Should be creamy and smooth!.

Pour sauce over bread pudding, place under broiler until golden, about 3 minutes!. Serve warm!.Www@FoodAQ@Com

Any old bread can be used, but for the "da bomb" bread pudding, use old buttermilk biscuits (not canned biscuits!!)!. Second place would be a french bread!. This is a good old-fashioned recipe!.!.!.Bigmama's!.

Mix in a large bowl:

3 1/2 C milk
4 eggs, plus 2 yolks
1/2 stick butter, melted
1 1/2 TBS corn starch
1 to 1 1/4 C sugar (how sweet do you want it!?)
1/2 tsp vanilla (optional)
Dash of salt
Cinnamon and/or nutmeg to taste

Add:
The crumbled bread or biscuits!. Mix until the bread has soaked up the majority of the milk mixture!.

Pour into a sprayed 9X13 casserole!. Sprinkle with cinnamon and sugar, and bake at 350 until it's set!. About an hour!.Www@FoodAQ@Com

200g/8oz bread, preferably stale, crusts removed
250ml/? pint milk
150g/6oz mixed dried fruit
50g/2oz mixed peel, chopped
50g/2oz soft brown sugar
50g/2oz suet
2 tsp mixed spice
1 large egg, beaten
ground nutmeg (optional)
icing sugar or caster sugar to decorate

Method
1!. Break bread into small pieces and place in a mixing bowl!.
2!. Pour over the milk and leave to soak for 30 minutes, then beat out the lumps with a fork to form a smooth mixture!.
3!. Add the fruit, mixed peel, sugar, suet, spice and egg and mix well!.
4!. Pour the mixture into a greased 18cm/7in square tin, smooth the top and sprinkle with nutmeg if liked!.
5!. Bake at 180C/350F/Gas4 for about 1-1? hours until browned!. Cool in the tin!.
6!. Cut the pudding into squares and sprinkle with caster or icing sugar!. Alternatively serve hot with custard or cream!.Www@FoodAQ@Com

110g Currants, Raisins or Sultanas

Method

Pre-heat the oven to Gas 3, 170 Centigrade!. Tear the bread into small pieces and soak in cold water for one hour!. Strain the bread and squeeze out as much as possible!. Place the bread into a bown and mash with a fork!. Add the fruit, sugar, and mixed spice and mix together well!. Add the egg and as much milk as necessary to make the mixture sticky but not too wet!. It should drop easily from a spoon!. Pour the mixture into a well greased baking tray, spread out and sprinkle the surface with more brown sugar!. Bake in the oven for one hour!. Check after one hour by pushing a table knife into the middle!. The knife should come our clean!. If necessary cook for a further 15 minutes!. Serve hot with custard or allow to cool and enjoy cold!.Www@FoodAQ@Com

Bread Pudding to die for
1 loaf of 2 day old bread soaked overnight in water!. Squeeze out the water and place bread in a bowl!. Add
8oz Sugar
8oz Shredded suet
8oz Mixed dried fruit
4 Eggs
1 - 2 teas Mixed spice
