Why do my cupcakes have a crispy top?!
The rest of the cupcake is wonderful but the tops are a litte crispy, kind of like a muffin top!.Www@FoodAQ@Com

Do a final stir by hand w/ a rubber spatula, making sure you get all the edges and bottom of the bowl incorporated!. Lower oven temp 25oF!. It it continues, back down on sugar content just a wee bit!. I can't tell you how much b/c I don't know how much the recipe calls for!.Www@FoodAQ@Com
Because the sugar carmelized on the top when they baked, because the top is exposed!. If you frost them, it will soften up under the frosting!.Www@FoodAQ@Com
