I would like to make chicken wings? Help!?!


Question: I would like to make chicken wings!? Help!!?
Can I prepare chicken drumsticks the same way you would prepare chicken wings!? Like boil them first and then deep fry it and then toss it in your desired sauce!.!.!.help please!? I was going to make shake N bake chicken but I don't have any tinfoil to line the baking sheet =(Www@FoodAQ@Com

You can bake them the whole time if you want!. You don't need foil!. Parchment paper works best, you could use wax paper, I would try nothing on the pan at all!. If you wanted to boil them I would do so for about 10 minutes, but it's not needed!.Www@FoodAQ@Com

I wouldn't boil them first!. Ewww!. Talk about sapping all the flavor out of them! Here's a godo recipe!. Make sure chicken legs are thawed:

Our Best Southern Fried Chicken

3 quarts water
1 tablespoon salt
1 (2- to 2 1/2-pound) broiler-fryer, cut up
1 teaspoon salt
1 teaspoon pepper
1 cup all-purpose flour
2 cups vegetable oil
1/4 cup bacon drippings

Combine water and 1 tablespoon salt in a large bowl; add chicken!. Cover and chill 8 hours!. Drain chicken; rinse with cold water, and pat dry!.

Combine 1 teaspoon salt and pepper; sprinkle half of pepper mixture evenly over chicken!. Combine remaining pepper mixture and flour in a large freezer bag!. Place 2 pieces of chicken in bag; seal!. Shake to evenly coat!. Remove chicken, and repeat procedure with remaining chicken, 2 pieces at a time!.

Combine vegetable oil and bacon drippings in a 12-inch cast-iron skillet or chicken fryer; heat to 360°!. Add chicken, a few pieces at a time, skin side down!. Cover and cook 6 minutes; uncover and cook 9 minutes!.

Turn chicken pieces; cover and cook 6 minutes!. Uncover and cook 5 to 9 minutes, turning pieces during the last 3 minutes for even browning, if necessary!. Drain on paper towels!.

Note: For best results, keep the oil temperature between 300° to 325° as you fry the chicken!. also, you may substitute 2 cups buttermilk for the saltwater solution used to soak the chicken pieces!. Proceed as directed!.

Yield: Makes 4 servings

season chicken and return it to the refrigerator and let it sit as long as time permits, at least 2 to 3 hours!. And always use small chickens!.


Salt and pepper, for seasoning chicken
1 (2 1/2 pound) chicken, cut into pieces
Peanut oil, for frying
3 eggs
1/3 cup water
2 cups self-rising flour
1 teaspoon black pepper


Season the chicken pieces well with salt and pepper and place in the refrigerator for at least 2 hours, up to overnight!.
Heat peanut oil in a cast iron skillet to 350 degrees F!.

Beat eggs and water in a small bowl!. In a shallow bowl, season flour with pepper!. Dip chicken pieces in egg mixture and then coat well in flour mixture!. Carefully add to oil, in batches if necessary, place lid on top of skillet, and fry until brown and crisp!. Remember that dark meat requires a longer cooking time (about 13 to 14 minutes, compared to 8 to 10 minutes for white meat!.)

Southern Fried Recipe:

INGREDIENTS:
frying chickens about 1 to 2 pounds each, cut into serving pieces
2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1 cup milk
vegetable shortening for frying
1 tablespoon bacon drippings

PREPARATION:
Wash chicken and pat dry!.

In a heavy brown paper bag or large food storage bag, combine the flour and salt and pepper; shake to blend well!. Pour the milk into a wide shallow bowl!.

Heat 2 to 3 inches of shortening in a deep heavy skillet over medium heat, or electric fry pan set at 375° F!.

Add the bacon grease!. When a drop of water spatters when it hits the hot oil, dip some of the chicken pieces into the milk then place in the bag and shake to coat evenly!. Arrange the chicken pieces in the fat, making sure not to overcrowd!. Fry the chicken until outside is golden brown and crisp, about 15 to 20 minutes, turning once to brown both sides!. Reduce heat to 350° F and fry until cooked through golden brown, about 15 minutes longer!. Turn once!. Drain chicken on brown paper or paper towels, adding a little more shortening and bacon grease if necessary, setting or regulating the temperature as for the first batch!.

DIRECTIONS
Heat oil in a deep fryer to 375 degrees F (190 degrees C)!. The oil should be just enough to cover wings entirely, an inch or so deep!. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat!. Stir together and heat until butter is melted and mixture is well blended!. Remove from heat and reserve for serving!.
In a small bowl mix together the flour, paprika, cayenne pepper and salt!. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated!. Cover dish or bowl and refrigerate for 60 to 90 minutes!.
Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown!. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together!. Serve!.

Dec!. 20, 2005Oh yeah! I love these and they're really easy to make at home!. I decided to bake them instead of fry them so they didn't taste just like Hooters but they were still great and much better for you!. I followed the instructions exact except I baked on a rack set over a jelly roll pan at 350 for 45 minutes!. Then I turned the oven to 375 and sprayed the wings with Pam and let them bake 5 more minutes so they got crispy!. Excellent and you'll never miss the deep fried taste!

Sep!. 3, 2003This is a great way to fix those restaurant style wings!. I've been making them like this for years!. The secret I picked up from buying the expensive Hooter's Brand wing breading and wing sauce in the grocery is this; Don't skip the step to refrigerate the wings for 60-90 minutes!. After this rest the spiced flour on the wings becomes sticky!. Now they are ready to fry!. This IS the secret to great breaded wings like this! Spices in the flour can be varied to taste!. also to simplify I use about 2/3 butter to 1/3 Frank's Hot Sauce for sauce!. Melted in the microwave it tastes like a million bucks! The expensive Hooter's wing sauce also taught me that for the hotter sauce use a greater proportion of sauce to butter!. The mild Hooter's sauce uses a larger proportion of butter to sauce!.

Mar!. 28, 2007Just when I thought it could'nt get any better!. I cooked these last night and followed directions as stated, with one exception I only kept them in the fridge for maybe 40mins before frying, I truly believe this step is what makes them so crispy and the seasoning was right on spot!. Next time I will leave in the fridge for 90mins as stated!. The sauce was great!!!!. I have cooked the Buffalo Chicken Wings I from this site in the past, and not to take away from that recipe it is good!. This recipe is the one I will use from now on for my hot wings!. UPDATE!!! THIS IS ANOTHER RECIPE THAT I CAN NOT STOP MAKING, I NOW also ADD ONION POWDER, GARLIC POWDER AND SEASON SALT TO MY FLOUR MIXTURE, I NEVER SKIP THE FRIDGE STEP, IF YOU DO, JUST TRY IT THE RECIPE WAY I'M SURE YOU WILL SEE THE DIFFERENCE, I NEVER BUY HOT WINGS OUT ANY MORE!!!!!!. THIS IS AN UPDATE ON MY UPDATE!!! first the wings aren't boiled, but yes you can use drumsticks!.

1!. 1 cup fresh orange juice
2!. 2 tablespoons grated orange zest
3!. 6 cloves garlic, minced
4!. 1/4 cup soy sauce
5!. 1 tablespoon brown sugar
6!. 1 1/2 teaspoons salt
7!. 1/2 teaspoon fresh-ground black pepper
8!. 4 pounds chicken wings



1!. Heat the oven to 400 degrees F!. In a large bowl, combine the orange juice with the orange zest, garlic, soy sauce, brown sugar, salt, and pepper!. Add the chicken wings and toss to coat!.
2!. On two large baking sheets, arrange the wings in a single layer!. Reserve 1/4 cup of the orange mixture and spoon the rest of the mixture over the wings!. Bake for 20 minutes!. Turn the wings over and baste them with the reserved orange mixture!. Cook until just done, about 10 minutes longer!.

* 1 to 2 pounds chicken wings (about 12 whole wings) 1st and 2nd joint, no tips
* 2 tablespoons canola oil, plus more for frying
* 3 tablespoons grated ginger
* 1/4 cup sherry
* 1/4 cup white vinegar
* 2 tablespoons sesame oil
* 1/4 cup honey
* 1/2 cup soy sauce
* 1/4 cup chili garlic sauce
* Chopped scallions, for garnish
* 3 tablespoons sesame seeds, for garnish

Directions

Preheat oven to 350 degrees F!.

Place the chicken wings on a baking sheet and cook in the oven for 35 minutes!.

In a medium saute pan over medium heat, add the 2 tablespoons of canola oil and the ginger!. Cook for 2 minutes!. Add the sherry, vinegar, sesame oil, honey, and soy sauce and chili garlic sauce and continue to cook for 2 more minutes!. Remove from heat!.

In large sauce pot or fryer, heat 3-inches of the canola oil, or enough to prevent wings from touching the bottom of the pan, to 350 degrees F!. Add the chicken wings to the oil and cook for about 3 minutes, or until crispy and golden brown!. Remove the chicken wings from the oil and drain on paper towels!.

Add the wings to the sauce!. Garnish with chopped scallions and sesame seeds!.
