You use a rubber scraper or wooden spoon and gently scrape down the side and across the bottom of the bowl, then back up through the batter to incorporate it!. This will keep it fluffy, and is usually done when there are whipped egg whites or cream in the recipe!. You do NOT stir or beat it!.!.!. However, brownies don't usually call for this techniqueWww@FoodAQ@Com

Instead of stirring or mixing like you normally would do, you would gently scrape the bottom to the top with spatula or spoon, so there is a folding action in the batter, like you would fold a towel or an article of clothing!.

In this recipe, it is done so the cashews and chocolate doesn't break into smaller pieces in the batter!.Www@FoodAQ@Com

To fold in an ingredient - pour the ingredient on top, and slide a spatula along the side of the bowl and down to the bottom and then lift the spatula up through the mixture in the center and repeat!.

You want to do this gently - trying to not agitate the mixture, just incorporate the two ingredients together!.

This is usually done with mixtures that already have a lot of air incorporated into them as you don't want to deflate them!.Www@FoodAQ@Com

exactly
fold
like turn the spoon with a twist

Fold or Folding: A method of gently mixing ingredients!. It is used for delicate or whipped ingredients that cannot withstand stirring or beating such as beaten egg whites or whipped cream without deflating the lighter mixture!.

To fold - use a rubber spatula, spoon, or even your hand to cut down through the mixture, move across the bottom of the bowl, and come back up, folding some of the mixture from the bottom over close to the surface!. Turn the bowl often so the ingredients are evenly distributed!. Work quickly but lightly, taking care not to deflate the lighter mixture and therefore decrease volume of final product!.Www@FoodAQ@Com

This means to gently stir ( like, with a folding motion, from the bottom to the top) and to not add air to the mixture!.

You put the lighter mixture, such as beaten egg whites, on top of the flour mixture (heavier mixture)!. Using a spatula, you pull the lighter mixer down one side of the bowl, gently moving it along the bottom and bringing it up on the opposite side!.Www@FoodAQ@Com

Imagine your bowl as a clock!.

Turn the bowl 1/4 turn as you gently insert the spatula into the dough!. Push down, turn a quarter, then again until the ingredients are just incorporated!.Www@FoodAQ@Com

to incorparate air into the mix, to make the mix light and fluffy!.Www@FoodAQ@Com
