What are the basic cutting technique's for chopping and dicing vegetables ?!

Julienne is the long slender cut!.!.I seldom use that!.!.
I create nice potato patties useing a mandolin!.!.
Small Dice is what is considered quality!.!.cooking!.!.

The tip of the knife never leaves the cutting surface!.
rock the blade back and forth, tucking your thumb behind the hand and using your knuckles as a guide to slicing!. to hold the knife, rest the handle down the middle of your innerpalm!. pinch the blade of theknife right above the handle, holding it loosely but firmly!. for certain things like onions it's easier to cut the onion in half, then cut it long ways but not all the way to the end (so the onion is still held together at one end!. Then when you cut it the other way it easily dices!. You can cuta a lot of veggies this way!.
